Vesta Coffee Roasters - Lobby — Restaurant in Spring Valley

It’s always refreshing to see a hotel lobby have an actually decent coffee shop instead of the more ‘expected’ chain, and Vesta did not disappoint! The lobby side Vesta was a refreshing visual break from the stimulus of the casino next to it, and the staff was incredibly chill and cool!

Now that it’s summertime and I exclusively get iced lattes, it can be a bit tough to judge espresso quality since it waters down so quickly, but this was one of the better iced lattes in the area honestly. The flavor was there and sharp without being acidic, and while it did water down just as quickly, I found myself much less disappointed with it than I have been in other coffee shops in the area. Located conveniently in the hotel lobby/registration area, Vesta Coffee Roasters boasts a wide variety of coffees, teas, sandwiches and pastries. I enjoyed an almond-macadamia latte (vegan) with a shot of vanilla syrup; not-so-sweet, yet flavoful and nutty. Barista Daniel was an absolute delight! He recommended the pear & blue cheese tart: a sweet, soft pear half generously filled with savory, blue cheese; baked atop a bed of of buttery, flaky, perfectly crisp laminated pastry.
