I have just recently within the last month moved to Salado and this was the last place I still needed to try when it came to local cuisine. The place was empty at about 5:00 PM so we were able to get in and order then sit down. It has the same ordering style as Clem Mikeska's does where you go up to the front and order then get your food and sit down. No waitresses or waiters are needed. Upon entering the place, it was kept extremely tidy. The two people up front working the counter were nice and we got taken care of immediately. Now I am a big BBQ fan and do my own which always turns out great with pull apart brisket and a nice 1/6 inch or more smoke ring (hate to toot my own horn here but I need a comparison). My wife got the brisket and I got the chicken, we both had potato salad and Mac and Cheese as our sides. The tea was sweetened just right and the mac and cheese was great along with the potato salad. Unfortunately I have to say that their BBQ needs quite the bit of work, especially since Johnny's right up the street makes a near perfect brisket and chicken. I could tell when the brisket hit the plate that my wife was going to be disappointed. No smoke ring and was rather greasy for some reason. Not sure how they prepared it, I am guessing they baked the brisket and injected the smoke since there was no smoke ring. My chicken was much the same way. Greasy and no pinkish color from smoke. Now the food was edible and for 20 dollars between two people wasn't to bad but I could have paid a bit more and went to Johnny's for a better experience. Cowboy's is not a place I would recommend since Johnny's is up the street another mile but if you are looking for a larger establishment where you can sit down, then this is the place to be since the tables are better spaced than Johnny's. Read moreWe stop on our way home to DFW and we only stopped because of the rating. Do not be deceived by the 4 rating. This place does not have quality BBQ. The ribs were tough and dry and not juicy and the brisket as just as bad. The mac&cheese was a pasta in cheese water terrible and the rest of the sides were not good. I think the local towns folks like the place because of the cheap prices but you get what you pay for. Cheap BBQ equals cheap terrible BBQ....
