Unfortunately, we learned the hard way not to get fish here. The mahi mahi tacos were extremely inedible and rubbery. Of course, in middle of Colorado, we should have known better that they would be frozen fish. This was confirmed by waiter after I asked. At least he was honest! The tuna appetizer wasn't that good either - poor quality. The chicken in fajitas was tough, as well.
In my experience, I'm guessing the food gets high reviews because of the sauces, guac, and cheese - which they seem to do good. The refried black beans were good. How can you go wrong when you smother something with good sauce and cheese?
I ended up removing the mahi and making bean tacos - but was honestly disappointed from my experience. Especially because of the high reviews - from which I expected better. The rice was underwhelming, too. The fajitas were super oily. So it was overall disappointing on all fronts.
Kudos to the server, who was honest and worked hard....

Our server greeted up promptly and we had our food in a reasonable amount of time during the Christmas holiday. Labor in the Vail Valley is still very difficult to find so I commend Del Toro for figuring it out and offering good customer service. Everything appears to be made from scratch. The Poblano rice is amazing and fresh. It's not parboiled like most restaurants use. Great skinny margaritas. We went twice and had a great experience. I will for sure go back. Regarding the 5% credit card fee, I did not notice that at first but I will say this. We went to 3 other Vail restaurants and every one of them had some sort of extra fee to pay for kitchen staff or other workers to "help offset the high cost of living in Vail" so I do not believe Del Toro is alone in practice. Here is what you need to change immediately: get rid of giant TV playing techno music, remove all of the fake cactus plants , change light bulbs to 40W or dim the lights down. Get rid of all of the circle lights, get rid of all TVs. Play modern Mexican music that is trendy in places like Condesa in Mexico City.
