I always love coming here when I'm visiting. It's the kind of place I'd come to regularly, but it's nice at least that a few times out of the year I'm able to come back. I remember being impressed (still am) by the idea that this place was a combination of coffee shop and a bar. I've gone to another place *kind-of* like this, but not quite done in the fashion that Dichotomy has. The combination and the split between two is done seamlessly. There's a whole aesthetic regarding the layout and design. It's kind of classy, kind of vintage, while also just being easy going. The atmosphere in itself is very easy going too. From the people who sit to the people who work here. It's comfortable. The seating, literally is, too. They have different types of sitting places that start from the outside going all the way to the back near the hall that lead to the bathrooms. They also have an upstairs area you can sit in too. Street parking is available near and right outside the shop. I've yet to see metered parking. The street area on the side of the shop does have a time limit, but it's of two hours. That's a pretty good while. I have yet to talk about the drinks. I haven't really explored drinks here. I've drank the tea a bit, but mainly I get what I tend to get at most places which is a mocha latte. In the future I'll try to explore and see how I feel about others. If you're wondering, they have tasted great.

The butterscotch latte, rich yet smoothly balanced, and the lavender oat milk latte, with its unique flavor profile, have become my personal favorites. What truly sets Dichotomy apart, however, is its commitment to the local community. The furnishings, including tables made by local artisans and outdoor tops of pink marble from Waco’s central library, showcase their dedication to local goods and artists. Whether you’re a fellow Baylor student looking for a study spot, someone interested in exploring Waco’s coffee offerings, or simply in search of a pleasant evening, Dichotomy Coffee & Spirits is a must-visit. Its combination of exceptional coffee, engaging atmosphere, and a strong sense of local spirit encapsulates the best of Waco’s coffee culture.

I've been going to Dichotomy since December 2012, before they opened up the location they're currently in. (It's currently January 2018, for reference.) This place has consistently been fantastic over the years. In the year I lived in Waco, I was at Dichotomy around three times a week, usually for coffee, and I still swing by every time I'm in Waco. They have the best espresso in town, a great pour-over. and a good selection of high-quality liquor. The staff knows their stuff, and they've always been friendly, though usually not talkative or gregarious. I love this place, and I will always remember Brett, Cody, and Michael (the OG baristas from 2012) fondly for introducing me to craft coffee.

Assorted specifics: --They use Apex coffee beans (their sister company) and a Modbar espresso/automated pour-over machine. Their espresso comes with a glass of Topo Chico sparkling mineral water. --They don't have a non-pourover/machine drip; all coffee is made by the cup. --They have a cooler with small-batch kombucha, hand-pressed juices, and some sodas. --Prices are a bit cheaper than specialty coffee shops in DFW and Austin. --There is often a food truck of some sort parked outside. --The Waco Farmers' Market is across the street on Saturdays. --They don't have 20 gazillion flavors of syrup like Starbucks and Common Grounds (local Waco shop) do. However, their coffee is high enough quality that it doesn't need the sugary stuff to make it palatable. --Magnolia Market (Chip and Joanna Gaines of Fixer Upper fame) and Balcones Distillery (award-winning whisky) are both within a...

Super disappointed with our experience at this location. After not being in the Waco area for a few years we came back with hopes to visit a location that was special to us when we were here and to have a fun experience with a good drink and reminisce.. such as when we used to go to Dichotomy when they first opened up. We even used to sit and chat with the first staff while trying the drinks they were making for the new menu. Upon entering this evening the lady at the front welcomed us and then after that we were completely ignored by the entire staff. We made eye contact with the multiple bartenders working. The main one being the one with long hair and glasses as he was talking to his buddies at the bar. He looked at us and then look back to his conversation as we stood there in the middle of the counter just standing there looking around as if we had missed something. There was nobody else in the bar that appeared to be ordering a drink. It was obvious we were being ignored. We're disappointed as this was a location that we loved when they first opened up but it seems now that it is turned into what seems to be a young crowd haven where they seem to put their nose up at people that aren't exactly as they are.
