Sigh...
I really wanted to give this a better review. We went opening day with the rest of Walla Walla (the lines were incredible) and parked across the street since onsite parking was full. We ordered four carnitas and were served promptly. Overall, the food was bland and no amount of condiments was going to fix this. First bite gave me some gristle but the rest was without incident.
Went back Saturday for a second pass to see how we would fair without competing with hundreds of other customers. We ordered a couple of mini-tacos - one steak, one chicken. These tasted much better although the chicken had a piece of bone. We were told that most of the meats are processed off premises through a third party and arrive for cooking.
The staff is amazing! They're incredibly friendly and efficient and get orders processed and out the door in timely fashion. Their opening day crowd was as robust as what we've seen in NY and they performed admirably. Also, there was always someone coming out to clean the tables or mop the floors as the crowd ebbed and flowed. The owners seem to take a lot of pride in what they're doing and they were on the front lines with their staff.
Ultimately, the food experience will determine how successful they become. It's not a bad experience by any means and the price point is probably among the most competitive in the area, but the flavors don't pack the same punch that some of the more established players serve up. I will give it another go if I hear things start improving but the food was....well, Gross. And it takes a lot for me to bad-mouth any burrito place. We purchased two meals (a cheese quesadilla and chili relleno) and a couple fountain drinks. $23 before tip is pretty rich for fast food but it can be worth it - if it's good. This was not. The Relleno was 70% tortilla and the remainder composed of a bland, unseasoned yet super-greasy (?) bean/rice mix while managing to undercook the chili. My friend's quesa consisted of a giant, dry tortilla with a central lump of unseasoned, greasy cheese in the middle. No guac, sour cream, sauce, or seasonings of ANY kind. To top it off, when we asked for a few chips and salsa, we were told "no chips/salsa for to-go orders" !! The final cut was a fairly long wait for our order while standing inside the restaurant which had managed to acquire an atmosphere hotter than the 89-degree outdoor temp. I'll give some benefit of the doubt that the AC just wasn't up and running in the new building but, Sheesh!

We were excited to try this place as we love Mexican food. We've lived in Mexico and visit relatives in California a lot. Even Houston has a great Mexican food scene, even though Tex Mex isn't my fave.
Good: salsa self serve with pickled carrots- yum!
My son got the WW burrito and said it wasn't exactly bad. Just not a lot of flavor, mostly potato. I got the rolled tacos (taquitos). Super hard, tiny bit of beans and a few spoons of rice. Guac was weird. Husband got the same and wasn't impressed. Other son got the quesadilla with beef. Said it wasn't bad but was really greasy, dripping all over. Flavor was bland. We loaded salsa on everything. Over $50 for not great food. Place wasn't very clean but it was late evening so maybe that was it. Being open 24 hrs will be their big draw when school year starts and college...
