Too long, here’s a summary - Food poisoning, underwhelming food, pathetic customer service.

I will give credit where it is due, the presentation of each meal was excellent and the staff were lovely, however i attend dinner to enjoy my food and enjoy i did not. Dinner started with a palate cleanser of biblical proportion, my wife was left looking confused by the 3 options served upon what i can only describe as a deconstructed vietnamese hat. The first course was confusing to look at, however the best tasting of the night, an egg yolk presented in it’s shell, with caviar and cream fraiche, tasty, yes, confusing, also yes.

Our second course we continued with perhaps a little hesitation.

But our third course, all hope was lost as they rolled out the sliced sea cucumber (the texture is as you would expect) and i received the extras from my wife as she believed firmly, sea cucumber belong at the bottom of the ocean.

Our optimism returned with back to back hits! A palate cleanser of damper with Vegemite and goats cheese (we may be biased as Australians but these did help Akuna’s case) and confit pork jowl to back it up, also quite enjoyable.

As we believed this would improve the flavour we paid the extra 2 million dong for some truffle shavings on our next course (this was very aesthetic as they shave it in front of you) however aesthetic was as far is at went, as we quickly realised there was no flavour to the truffle, at all. The rest of the meal, mouse deer and fermented yabbi was tough and very bland.

The palate cleanser for dessert was i believe the pièce de résistance, a biscuit resembling a goldfish, filled with a jam that was overpowered by the mediocre texture and taste of the biscuit, reminding me only of the soggy bit of biscuit that has fallen into the bottom of your tea as you dip your scotch finger into it at 11 at night.

Our dessert, was a trio of jelly and a sliced up melon, the melon was fine, you could run your car on the jelly. Nothing to write home about.

Last dessert came out in 2 baskets hung on a yolk, at this point, we were ready to go and this did not improve the mood as much as one might hope.

The whole experience was confusing and the friendly staff can only make it so bearable when you spend 12 million dong to eat good food and realise the pho from lunch could have comfortably replaced any of these courses.

To wrap up this experience my wife had food poisoning all night (way to start a honeymoon) and i was given no response when asked about my experience and mentioned the food poisoning. Absolutely appalling...

Recently had the opportunity to dine at Akuna, a newly Michelin-starred restaurant tucked inside the luxurious Méridien Hotel. This was my first visit since they earned their 1* Michelin recognition, and I was eager to see if it lived up to the hype. As is my usual preference, I opted for a seat at the counter, where you can watch the chefs in action. The setup was particularly comfortable, making it one of the best counter dining experiences I’ve had. Akuna offers a single, six-course tasting menu, complete with amuse-bouche (very nice) and mignardises (yummy). While most dishes were delightful, the shaved arrowhead squid left something to be desired - it was rather bland and lacked the flavor I was hoping for. On the brighter side, the porcupine dish and the dessert stood out as my personal favorites, both delivering on flavor and presentation. Despite their extensive wine list, we decided to try both the global and Australian wine pairings. Unfortunately, this part of the experience fell short. The wines, except for the reds, didn’t quite meet our expectations. This might be a matter of personal taste, but the pairing didn’t enhance the meal as much as I had hoped. Another aspect of the evening was the cheese trolley, which we were excited to try. However, the charm of selecting cheeses was somewhat diminished by the upfront mention of price for the option. Discussing price and weight (800k for 60g) upfront took away from the experience. Part of the joy in indulging in a cheese trolley is the spontaneity and surprise, which was unfortunately lacking. In summary, Akuna offers a pleasant dining experience, though I’m not entirely convinced it justifies a return visit. The service was attentive, but it felt a bit disjointed with different staff members explaining each course - a minor preference, perhaps, but one worth noting. Would I return? Possibly, especially for a seat by the window to enjoy the cityscape and the view of the river. However, the single-menu format feels too restrictive, especially when the bill comes in at over 15 million VND for two. Quality does have its price, but offering more options on the menu is essential. If the menu changes seasonally, I might be tempted to return, but if the majority of the courses remain the same, it’s unlikely. In conclusion, while I enjoyed the experience, it would take a bit more variety to bring me back.

The evening begins with a playful parade of canapés that blur the line between elegance and mischief. From delicate florals to irreverent snack-pack tributes, each bite surprises without trying too hard. It’s inventive, cheeky, and sets the tone for a night that doesn’t take itself too seriously — yet knows exactly what it’s doing. The first course arrives like a Fabergé fantasy — a halved eggshell brimming with luscious Kaluga caviar and savoury custard, paired with a slender poppyseed crisp. Indulgent yet restrained. Then comes a briny, bright composition of Hokkaido scallop, gooseneck barnacles, lotus seed, and pickled durian — a sea breeze in edible form. Hand-shelled spanner crab follows, crowned with a jewel-like banana heart jelly and a saline pop of horseshoe crab caviar, both delicate and bold. The bread course delights in its subversion — soft, fragrant rolls with an aromatic core, paired with a playful lineup of “butters,” from ikura cream to a cheeky Vegemite dollop. A butter-poached slipper lobster then arrives cloaked in velvet, its richness balanced by mountain pepper and golden pearls — pillowy and luxurious. Smoked pork jowl brings primal depth, wrapped in black moss and paired with firefly squid and caramelised fish sauce. Then: a showstopping brush-tailed porcupine, perfectly roasted and crowned with Australian truffle, accompanied by the most exquisite, fresh herb salad of the evening — bright, floral, unforgettable. Desserts sing of tropical memory. One captures pandan, mango, passionfruit, and creamy coconut with nostalgic familiarity, while a coconut wafer offers crisp, herb-kissed elegance. The crown jewel: a spiral of frozen Vietnamese crown melon hidden within layers of verbena cream and cocoa caramel — refreshing, cold, and brilliantly textured. The final act arrives on a balancing scale — petit fours infused with Southeast Asian spirit, from coffee to palm sugar to floral notes, capped by a celebratory mango tart that was as heartfelt as it was refined. To top it all off, handwritten birthday wishes and a porcupine spike souvenir — a personal, whimsical close to an extraordinary journey. A meal that lingers — not just on the palate, but in memory.

Recently had the opportunity to dine at Akuna, a newly Michelin-starred restaurant tucked inside the luxurious Méridien Hotel. This was my first visit since they earned their 1* Michelin recognition, and I was eager to see if it lived up to the hype. As is my usual preference, I opted for a seat at the counter, where you can watch the chefs in action. The setup was particularly comfortable, making it one of the best counter dining experiences I’ve had. Akuna offers a single, six-course tasting menu, complete with amuse-bouche (very nice) and mignardises (yummy). While most dishes were delightful, the shaved arrowhead squid left something to be desired - it was rather bland and lacked the flavor I was hoping for. On the brighter side, the porcupine dish and the dessert stood out as my personal favorites, both delivering on flavor and presentation. Despite their extensive wine list, we decided to try both the global and Australian wine pairings. Unfortunately, this part of the experience fell short. The wines, except for the reds, didn’t quite meet our expectations. This might be a matter of personal taste, but the pairing didn’t enhance the meal as much as I had hoped. Another aspect of the evening was the cheese trolley, which we were excited to try. However, the charm of selecting cheeses was somewhat diminished by the upfront mention of price for the option. Discussing price and weight (800k for 60g) upfront took away from the experience. Part of the joy in indulging in a cheese trolley is the spontaneity and surprise, which was unfortunately lacking. In summary, Akuna offers a pleasant dining experience, though I’m not entirely convinced it justifies a return visit. The service was attentive, but it felt a bit disjointed with different staff members explaining each course - a minor preference, perhaps, but one worth noting. Would I return? Possibly, especially for a seat by the window to enjoy the cityscape and the view of the river. However, the single-menu format feels too restrictive, especially when the bill comes in at over 15 million VND for two. Quality does have its price, but offering more options on the menu is essential. If the menu changes seasonally, I might be tempted to return, but if the majority of the courses remain the same, it’s unlikely. In conclusion, while I enjoyed the experience, it would take a bit more variety to bring me back.

It’s inventive, cheeky, and sets the tone for a night that doesn’t take itself too seriously — yet knows exactly what it’s doing. The first course arrives like a Fabergé fantasy — a halved eggshell brimming with luscious Kaluga caviar and savoury custard, paired with a slender poppyseed crisp. Indulgent yet restrained. Then comes a briny, bright composition of Hokkaido scallop, gooseneck barnacles, lotus seed, and pickled durian — a sea breeze in edible form. Hand-shelled spanner crab follows, crowned with a jewel-like banana heart jelly and a saline pop of horseshoe crab caviar, both delicate and bold. The bread course delights in its subversion — soft, fragrant rolls with an aromatic core, paired with a playful lineup of “butters,” from ikura cream to a cheeky Vegemite dollop. A butter-poached slipper lobster then arrives cloaked in velvet, its richness balanced by mountain pepper and golden pearls — pillowy and luxurious. Smoked pork jowl brings primal depth, wrapped in black moss and paired with firefly squid and caramelised fish sauce. Then: a showstopping brush-tailed porcupine, perfectly roasted and crowned with Australian truffle, accompanied by the most exquisite, fresh herb salad of the evening — bright, floral, unforgettable. Desserts sing of tropical memory. One captures pandan, mango, passionfruit, and creamy coconut with nostalgic familiarity, while a coconut wafer offers crisp, herb-kissed elegance. The crown jewel: a spiral of frozen Vietnamese crown melon hidden within layers of verbena cream and cocoa caramel — refreshing, cold, and brilliantly textured. The final act arrives on a balancing scale — petit fours infused with Southeast Asian spirit, from coffee to palm sugar to floral notes, capped by a celebratory mango tart that was as heartfelt as it was refined. To top it all off, handwritten birthday wishes and a porcupine spike souvenir — a personal, whimsical close to an extraordinary journey. A meal that lingers — not just on the palate, but in memory.
