This French Cooking class with Fabrice was everything my wife and I could've dreamed of and then some. Walking in we were expecting to get a short tour of some market vendors, learn about them and have a pre-set meal that we would cook but Chef Frabice blew our expectations out of the water.
When we met at the meet-up location he explained to us how the process would work, and that my wife and I would be the only two people in the class. The process worked in such a way that we were in complete control of the menu. Chef Fabrice asked what we were in the mood for in terms of starters / main dish and dessert and proceeded to help guide us to a meal of our dreams.
We mentioned we wanted to do a first course of Fish, followed by something with Duck breast and potatoes and finally some sort of fruit / chocolate tart. What happened next was truly amazing. He provided some suggestions on how to finish each of these dishes: White Beurre Blanc sauce and julienned vegetables (legumes) with the Fish we chose Pomme Anna (beautiful potato dish), Rosted Figs, and a Groseilles sauce (Red Currant) to pair with the duck breast Pear and Chocolate for the tart; and a strawberry coulis sauce; a combination he said he had never tried before
That was just the beginning before we got to work! He helped guide us with every step of the cooking process by either demonstrating and then allowing us to finish or just instructing us on what we should be doing. Because of his expertise I think anyone with minimal cooking experience (but loves to cook) can handle and love the experience.
After all the cooking and eating; we finished with a final cheese course where we learned about all the different French cheese varietals and where in France they came from.
Lastly, Chef Frabrice and the team was so accomodating: I myself have a shellfish allergy and my wife being pregnant at the time could not have certain things. Nonetheless he went out of his way to secure extra ingredients so that we could both partake in every part of the meal.
It was truly an unforgettable and magical night and my wife and I will remember all these dishes. We can't wait to remake...

Fabrice listened to all seven members of our class while selecting ingredients to make a five course meal. As we went from shop to shop gathering the freshest of foods Fabrice explained why he picked the items and ensured everyone was participating. The shopping alone was a great lesson. Then back to the kitchen, Fabrice assigned tasks to each of us explaining as we went along the different aspects of the preparation, teaching us some skills along the way. We prepared sauces, vegetables, meat and desserts, all from scratch. He explained important information about temperature, time, stirring and pouring methods and so much more. Fabrice was friendly, knowledgeable, patient and encouraging to each member of the class. The meal we shared with wines at the completion of the class was so delicious, it was worth more than the price of the class. We highly recommend that anyone visiting Paris should make time to experience this authentic, Parisian adventure, preferably with Chef Fabrice. Thank you Chef. We will ever forget you! We went back for a second class on making French Macarons. Who doesn't love a delicious French Macaron but who would believe you could make macarons, from scratch, yourself? We so enjoyed this class with Chef Sarah! Sarah was very supportive and attentive to our small class and helped us learn important mixing and cooking techniques to create perfect macarons. During our recent visit to Paris, my daughter and I participated in the Macaron Class. Chef Sarah led our class, with the assistance of her sous-chef Isabella. Chef Sarah’s exuberant energy and enthusiasm made learning the intricacies of macaron baking both fun and easy. As she taught, she masterfully wove both her personal experiences and professional knowledge into an easily understood narrative that made learning from her an absolute joy – plus we got to eat/keep the fruits of our labor at the end. As chef Sarah taught, Isabella worked in the background, producing bowls of ingredients as if by magic, spreading and covering the filling to flash chill, and likely countless other things that I didn’t even notice – allowing us to focus on making macarons. All of the dirty dishes seemed to disappear into thin air, as the dishwasher would sneak into the back of class to collect dishes from the “dirty bin” – everything ran smoothly and efficiently.
Although the ingredients were staged for the class, we performed all of the sifting, mixing, baking, cooking, and final assembly of the macarons. Chef Sarah did make it clear that making macarons at home would be a more time-consuming process, as we would likely not have access to some of the same equipment/resources as a professional chef. As an example, we used a flash chiller to cool the fillings during the class – something that we would likely need to use a regular refrigerator for at home. We also didn’t have to do any of the dishes, so that’s an extra bonus!
