We visited Mushroom Direct just before they closed for the day but they took the time to walk us around the facility and teach us about their mushrooms. They are an incredibly friendly business, and clearly experts in their field! We got a sample box of several species, including Lion's Mane, shiitake, oyster mushroom, and maitake.
We had cooked with oyster mushroom and shiitake before, but had never tried Lion's Mane or maitake. For the Lion's mane, we made a wonderful steak, served with vine tomatoes, asparagus, and a pepper corn sauce. We cooked these just like a regular steak—basting and all!
For the maitake, there is less out there in terms of recipes. What I will say is, if you haven't had them before, I wouldn't recommend eating a lot in one sitting—split up the bunch over the course of a few days so that your stomach can get used to them. Per our research online, we kept the cooking very simple, cooking on their own, and only adding a pinch of salt at the end. To get the most out of their earthy, rich flavor, we combined with some shredded chicken breast and risotto. I cannot recommend trying maitake enough, just in small quantities!
