Although Sanuki Udon's "Kake Udon" and "Shoyu Udon" may look similar, they are completely different in terms of flavour and eating experience.
Kake Udon Composition: Hot broth (based on dried sardine stock) and udon noodles Flavour focus: broth (soup) Characteristics: Based on Kagawa's dried sardine (niboshi) broth, it is aromatic and light. Soy sauce and mirin are used sparingly, and achieving the right balance of saltiness and umami is key. The noodles are there to "absorb the broth". In other words, it's a type of udon that is meant to be savoured with the broth. It's the 'Soul Soup of Sanuki' that warms a chilled body. 🧂 2. Shoyu udon Composition: Boiled udon noodles (hot or cold), simply topped with dashi soy sauce. Flavour focus: The Noodles Themselves Characteristics: There is no soup (just mix in a small amount of dashi soy sauce). The firmness of the noodles and the wheat flavour are the most prominent characteristics. It is typically served with lemon, grated daikon radish or green onions. In other words, it is "Sanuki's simple noodle dish eaten with dashi soy sauce". The noodles themselves are the star.
To put it in image terms: 'Kake udon' = 'soup udon' that comforts you with its broth, and 'shoyu udon' = 'Sanuki's plain udon' where you savour the wheat.
Located right in front of the station, this self-service Sanuki udon shop has an impressive, down-to-earth atmosphere that feels authentically local, despite being surrounded by tourists. The store skilfully balances convenience and tradition, offering modern QR code and cashless payment options while maintaining the genuine charm of a local udon eatery. The udon is served in true Sanuki style, enabling visitors to experience the authentic taste and presentation of Kagawa's speciality. With a wide selection of tempura, croquettes and other toppings, plus a special soy-based broth enhanced with rare sugar syrup, the flavour is beautifully enhanced. Considering its prime location, the prices are very reasonable. The service may feel minimal, but that's all part of the Sanuki udon...
