Great tasting room and super nice staff! The decor is fun and super cozy; we went on 2/14 and had the place all to ourselves early in the afternoon and enjoyed tasting spirits and cocktails. Their jalapeno lime vodka and spicy bloody Mary mix is awesome. They also have a non-spicy version of their bloody Mary mix which is very good as well. The mix is not "watery" but on the thicker side making for that perfect BM! They sell a version of their bloody Mary in a can and they pretty darn close tasting like one made from scratch; these are perfect for traveling. I wrote a quick review when we ducked into the distillery on a whim back in October 2017, and at this time I'm editing my review, still keeping my rating at 5 stars. The proprietor was pretty cool and provided us with a very personalized tasting experience and I admired him for following a dream to strike out and do a distillery startup. We tried the Painted Lady Gin and really enjoyed that but the real star of the show for us was the Columbia Absinthe Verte. Pilot House has unique expressions of whiskey, Oregon single malt (aged at sea!), gin, vodka, and “agave spirit” (it’s tequila but legally can’t call it that I guess). Rum and absinthe too if you’re adventurous. They also have canned cocktails (10% ABV) that are great for going camping, to the lake house, etc. Super convenient when you don’t want to fuss with a million ingredients for Bloody Mary.
