Let me start by saying that the minute I walked inside this place, I was shocked and happy in the same time. Fresh milled flour for a home baker like me, is as good as it can get. I was gifted a 50/50 whole wheat to white flour ratio bag by the very nice owner. I never liked whole wheat in a sourdough more than %25, because it is very heavy and dense. When I got home, I decided to make sourdough baguette šŸ„–, as my starter was ready to roll. It turned out incredible. Yummy, light and very airy, not dense. I ended up eating 1 1/2 baguette in one day lol. I bought some other grains from him. The owner was very nice, knowledgeable and he even made some fresh Injera for us. Delicious! Do your self a favor and go get fresh milled flour. If you never had it fresh, then you are up for a treat.

Thanks to Jay and his mill we have access to the highest quality flour possible right here in Lewis county. It’s a blessing and a fortification to your family to cook for them using this ingredient. Plus, it really tastes great!! All of my recipes really do taste noticeably better with this flour. Pictured are some English muffins I made from the spelt flour and Curiosity whole wheat pastry flour. Don’t buy a couple pounds of souvenir flour here; get yourself some cambros from cash and carry, stock up and go all in on this incredible resource. Your body and soul will feel the difference of quality.

We ended up walking out with starter and ivory teff flour so we could make our own. We left feeling fulfilled and look forward to coming back. Definitely a gem!

He toured us through his store, gave us sourcing information about his offerings and best of all, gave us Ethiopian Injera flatbread demonstration using his house sourdough starter. We ended up walking out with starter and ivory teff flour so we could make our own. We left feeling fulfilled and look forward to coming back. Definitely a gem!
