I recently had a great time in the Bread Baking Hands-On class. I've been an amateur baker since age 12, focussing mostly on desserts and pastry. Though I've dabbled with breads here and there, it was fun learn a few tricks and the science behind leavening.
The class is well paced for both novice and intermediate bakers. You bake 3 breads, one with yeast and two with chemical leavening (baking powder/soda) and are partnered with 1 or 2 other students depending on the bake. For the novice baker, be ready to switch to a new recipe while you wait for another.
The one suggestion I had for the class is this: Give students the recipes the day before. I found it difficult to read three recipes while paying attention to what the instructor had to say.
Once you've signed up for the class, I suggest asking in email for the recipes in advance, so that you'll have an idea of what to expect and the ability to give the instructor your undivided attention.

I began with the Knife Skills class and I am glad that I did. I have taken several classes and enjoyed every one of them. I learned about Italian from Chef Tom KreSalerno. We attended a couples cooking class that was enjoyable, and another on Sauces. You always prepare a meal that you enjoy with your class and always have enough to take home. I fully intend to continue but ran into scheduling conflicts with family. The learning facility is very good for learning cooking skills. Class sizes are small and very friendly. Instructors emphasize healthy cooking, encouraging use of fresh produce.
