I came. I drank. I transcended.
Amy and Amelia didn’t just serve margaritas — they manifested them. I’m not convinced they used tequila. I think they harvested joy from the cosmos, shook it with divine citrus, and served it on ice with a salted rim sent straight from the heavens.
These two absolute cocktail sorceresses were slinging margs so fast and so flawlessly, I swear I heard the sound barrier break. Amelia shook that tin like it owed her money. Amy rimmed those glasses with such purpose I thought she was about to summon a citrus deity.
Every margarita was a religious experience. Lime? Perfectly zesty. Tequila? Smooth enough to forgive your ex. Salt rim? Balanced with the grace of a tightrope walker. If Picasso made drinks instead of paintings, he’d be Amy and Amelia.
At one point I blinked and there were three fresh margaritas in front of me. No one saw them make them. No one heard a shaker. Did they appear from thin air? Are they bartenders or benevolent witches of agave-based magic?
By my third marg, I was emotionally prepared to follow these women into battle, or at least a karaoke bar.

The staff was prompt in seating us and informing us the easiest way to order would be using the QR rather than ordering at the bar or from the server. Orders were placed and due to working out the first day kinks I had to retrieve our own water and glasses, to which they apologized. There was some slight confusion with the drink delivery, but in the end we both got served. I ordered the fired chicken burger and my partner the mushroom. The flavor was delicious and the producers rested fresh and of a decent quality especially for airport food. Unfortunately the chicken in my burger wasn’t quite prepared properly, my first bite was of a cartilaginous joint of some sort, but I crunched it up anyways. The Bloody Mary was just the right amount of spicy and upon review it appears the alcohol suppliers come from far North Queensland where I’m from so they get credit for good taste. The kids wanted something to eat so I thought of finding an airport lounge where we could sit and grab a quick bite before the next leg. We were in Economy Class so the only way to get into a Lounge was Priority Pass. I asked around and the Independent had a tie up with them. I approached the counter and was greeted by Caitlin (I hope the spelling is right). Caitlin explained how it worked and offered me options for food and drinks. I told her we were on a tight schedule and she said she would get it done straight away. A little later one of my little ones changed their mind so I had to amend the order, which was also greeted with a smile and can-do attitude. 10 mins later our food had arrived and I’ll tell you what, a burger has never tasted better for me.
