We randomly selected Vietnamese Pho Ever as our dinner option when recently in the area.
Even with a sign at the counter apologising for a staff shortage, we took a seat and were served within 5-10 minutes. The lady that helped us was very friendly and accommodating and, after taking our order, our meals were presented after only a minimal wait.
We both selected the rice noodle/vermicelli Salad Bowl with chicken, and it was great value for money. The serving was huge and there was ample meat added. If anything, coriander was in short supply, an ingredient we both love in our Vietnamese meals. That being said, it didn't spoil the experience and the meals were still genuinely enjoyed. A big thumbs up to the pork spring rolls as well, they were excellent.
The store itself is big and open, with plenty of tables throughout. Due to the large number of children there at the time, it was quite noisy, so we eventually moved outside and found a table there. We're parents so not criticising the hustle-and-bustle, it had just been a long day and we needed some downtime.
Overall, Vietnamese Pho Ever is a humble store hidden in the midst of Banyo's residential neighbourhood. There are no bells and whistles, the menu is simple, as is the decor. The food was really good, however, as was the service. And that's what's important and what counts. The fact it was Monday night and 3/4 full says it all. If ever back in that part of the world, we'd definitely return for another meal....

That the local Turkish was good if there were lots of Turkish migrants eating there and so on. She would search out places and go look beforehand to see if whatever locals were eating at said establishment and then decide to eat based solely on which had most locals. This lead to eating at some of the best ethnic restaurants around. She would also ask waiters to tell the chefs to make it like you would and not to "Australianise the food". This was so embarrassing growing up so I try my hardest not to do this myself but always find myself seeking out the restaurants which are the most authentic.

Family run business with absolutely wobderful staff. Attentive, friendly and know what they are doing.
Yeah, the decor is a bit tacky but you will find that the food is so damn good you'll be able to ignore the ugliness. Plus the friendly staff and generally packed house give the atmosphere a big lift. Also because they haven't spent thousands of dollars on decor you will find the food prices substantially lower than other Vietnamese.
Other than Viet Street Eat in Sandgate this is the best Vietnamese in the inner North of BrisVegas.

The texture from the bean sprouts accentuated the dish a lot and the basil added really nice flavour as well as the lemon. And there are many tables to choose from, everyone here seems to be having a good time, it makes the atmosphere very welcoming and pleasant. Personally after reading the reviews people said customer service wasn’t good but I personally think it was great, he greeted us when we came in and took our order as fast as he could. People need to understand he isn’t being rude and there’s obviously a language barrier and hes just trying to do his job.
