My partner and I came here a couple of years ago close to their opening and the Pasta was amazing. Tonight things were different.
The "Cacio e Pepe Gnocchi" is quite literally inedible. It's almost like biting into a raw bulb of garlic. I have never had a Cacio e Pepe with garlic in the first place but this is just absurd. There is no flavour of cheese or pepper. If an ingredient is going to be included that heavily, it should probably be listed on the menu. There's about 10 pieces of Gnocchi and the bowl it comes in is about 3/4 full of garlic sauce, which again I've never seen that much sauce with this dish. Very inauthentic.
The Nero Di Seppia was below average. The sauce itself tasted fine, but nothing amazing. There were about 2 teaspoons of crab in the dish. Unfortunately the pasta itself was completely overcooked and soft.
The Wagyu Lasagna is also very unsatisfying. When I opened the container it's half full of some sort of creamy sauce?? It's baffling to me why there's a pool of cream or milk or whatever it is. Lamentably this made the pasta sheets sodden and mushy. Again I really think if there is going to be something that dominant, if that's how you want your dishes to be, it should really be mentioned in the menu.
The deep fried Gnocchi is probably the only edible thing but again it's basically swimming in Nutella which I'm sure some may enjoy but it just makes the Gnocchi soft and no crisp to the fry and also overpowers the cinnamon sugar.
The staff were nice and the restaurant is clearly quite popular. Quite upsetting that since last visit the food has gotten so terrible from what it was. For the price of 4 dishes being $100+ I would have expected far...

We are from Italian decent (as is the head chef!!) and can tell the difference. The people in Huskisson don’t understand how truly lucky they are to have a Pasta Buoy!?! We would die for a local pasta place like this in Sydney and we are patiently waiting until one arrives! Be grateful!!! We would be getting this pasta for breakfast, lunch and dinner. It was hard to leave Huskisson because we were dreaming about this amazing food. We had the garlic sourdough, squid ink, burratta and pesto with chicken - and EVERY. SINGLE. DISH was to die for. I can’t fault a single one and I can’t tell you which one I liked the best. We’re sad that we tried this place on our last day in Huskisson otherwise we wouldn’t have bothered eating anywhere else. We had the fish and chips down the street (world famous something?) which was a poor excuse for fish and chips at a beach destination, you people don’t know what you like - we were at Avoca the week before and actually had insanely good fish and chips where the chips are actually crispy and delicious instead of barely cooked! We also ate the Huskisson Hotel which is average, the prawns were small and chicken burger was so bad I didn’t finish it. I’m so sad we wasted our time and didn’t go to Pasta Buoy every night.
