de’sendent is not simply a restaurant. It is an experience, choreographed with quiet confidence and shaped by a philosophy that favours depth over dazzle, precision over pretence. Situated on Margaret River’s main street in a sleek, architecturally honed space, it offers a degustation menu that reads like a seasonal sonnet: ten thoughtful chapters unfolding over nearly three mesmerising hours.
From the outset, the experience signals intention. Each course emerges not with theatrical flair, but with composure and clarity. A tartare of beef—velvety, nuanced, and impeccably balanced—was the undisputed highlight of the evening for me. For my dining partner, it was the scallops—plump, sweet, and perfectly kissed by the pan—and the wagyu fillet that stole the show. He opted for the gluten-free variation of the menu, and the wine pairings offered alongside each dish were beautifully curated, never once suggesting compromise.
Indeed, the beverage program deserves singular praise. While my dining partner’s wine pairing was handled with admirable flair, I chose the non-alcoholic pairing, which proved nothing short of revelatory. Curated and presented by the Maître d’hôtel himself—whose presence throughout the evening lent the entire experience an air of quiet enchantment—each drink was a study in craftsmanship and meaning. Cold-infused teas, fermented tonics, botanical spritzes… each was introduced with its own origin story, designed not merely to accompany the food but to echo the experience of the corresponding wines. Rarely have I encountered such poetic parity in a temperance offering. Each sip was a meditation.
The one misstep—albeit a notable one—was a fish course that incorporated a sorbet element. This dish, though perhaps intended as a daring palate cleanser, unfortunately ventured into territory that felt more conceptual than edible. The flavour combination evoked something unpleasantly akin to defrosted bait, freshly retrieved from an Esky. Even my dining partner, a devotee of all things seafood, found it unpalatable. One wonders whether this particular pairing was actually tasted during development, as it seemed entirely misaligned—both in mouthfeel and in enological complement. Still, part of the power of a degustation lies in its capacity to challenge the palate, and while this course did not succeed, it did not mar the integrity of the broader experience.
And what an experience it is. The pacing is gentle, the service luminous, the atmosphere hushed but never austere. The Maître d’hôtel, in particular, brought a grace and generosity of spirit that elevated the evening from fine dining to something more soulful. He was the evening’s quiet anchor, offering not only guidance and knowledge, but a kind of narrative continuity that transformed the meal into a story.
In sum, de’sendent delivers on its promise of refinement and risk. While not every note rang true, the overall composition was hauntingly beautiful. It is rare to find a restaurant that strives so sincerely for resonance—rarer still to find one that achieves it.

Their knowledge and care shine through as they detail the inspiration, technique, and provenance behind each plate—from kangaroo and fig tartare to the delicate fish and caramel cream.
The dishes are served on beautiful, hand-thrown pottery, each piece unique and perfectly complementing the artistry of the food it carries. Every course is a balance of boldness and restraint, surprising combinations that still feel rooted and harmonious. The wine pairings are divine—each glass elevating the food it accompanies in a way that feels intuitive, enhancing the flavors without ever overpowering.

It’s clear that no detail is overlooked. Even the restroom reflects the restaurant’s ethos, with cloth hand towels and refined touches that echo the care seen in every element of the experience.
To celebrate our anniversary here was a perfect choice. We were not only served exquisite food but made to feel truly celebrated. The handwritten note at the end of the meal—a personal touch—capped off an evening that felt curated just for us.

Read moreOur visit was on the 6th of September, a little on the quieter side for a holiday through the Margaret River region.
A great addition to the fine dining scene in Margaret River. The chef, Evan, is on to something with an impressive tasting menu, interesting ideas and a respect for the local produce. The 5 wine pairings were on point and the atmosphere when we went was nice and relaxed. The service was homely and friendly, but also with a high level of attentiveness, and it didn't feel like they rushed you through the dinner, giving us some space between the courses. Our water glasses were never left empty for more than a moment, and the chefs were kind enough to present some of the dishes themselves, it is always a pleasure to see the ones preparing the food also present them, contrary to many restaurants where the chefs can sometimes be faceless ghosts behind a kitchen door.
Though we never got to try its predecessor, I do think the current incarnation of De'sendent is doing many things great, and I am sure they will keep pushing the boundaries of great food for the whole region.
