REVIEW: ❤ From Kushiro, I would recommend: Slow Roasted Short Rib. There was entertainment/art behind seeing the whisky alight with flame 🔥 and being able to taste the smokiness after. The short rib was incredibly delicious, with meat that melted in my mouth. Its barley and carrot accompaniment were seasoned wonderfully and you don't need rice. Scampi tartare. It was light enough where you could taste the sweetness of the scampi, while the tomatoes were a nice touch. You really don't need nachos and can eat this as it is! So refreshing. 😍 Along a similar vein, the beef tartare is seasoned so well and balanced that you don't need the nori rice cracker. It's a nice carriage but you can enjoy the delicate flavour of beef with the mustard seed and chives. ☘

The one dish I wouldn't get again is the Cauliflower. Although it's roasted in the description, it feels more steamed with how plain it is. There's no browning to it. The light spice and quantity itself is nice, but there's no WOW factor. 😢

Service was so friendly. Water was continuously topped up, dishes introduced and the waiter overheard my friend wishing me a hbd. So he brought out the Tiramisu with a candle which made it so special!...

Kushiro is a Japanese fusion spot from Hong Kong that blends traditional techniques with contemporary flavors.

For starters, the scampi tartare with lobster bisque panna cotta was incredibly unique and delicious. I only wished there was more of it. The oyster shooters were predominantly alcohol, which masked the oyster's natural flavour. The cured salmon could have benefited from a longer curing process to bring out more of the ume and daikon notes, but it was still enjoyable. The kingfish sashimi, on the other hand, was flawless.

We also tried their char siu, which was cooked to perfection. It tasted like a refined and elevated take on traditional Chinese char siu, with a perfect lean to fat ratio. The tom yum soup was packed with bold flavours and loaded with seafood. The short rib, flamed with whisky, added a dramatic touch to the meal. However, the whisky was overpowering and became overwhelming after a while. The ribs with minimal whisky were cooked to perfection, but the heavy use of whisky was an overkill.

I had an incredible dining experience at Kushiro! The service was impeccable, with attentive staff ensuring every detail of our meal was perfect. The tom yum soup was packed full of flavour and loads of seafood. The short rib which was flamed with whisky was very theatrical. However, there was so much whisky it overpowered the short rib. It got quite sickening after awhile. The ribs that barely had any whisky was actually cooked to perfection but the whisky was an overkill.

Our Experience at @kushiro_fitzroy – A 10/10 Dining Journey

From the moment we stepped in, we were warmly welcomed by the staff and presented with the drink menu. As mentioned in my previous post, their cocktails, premium Japanese spirits, and sake selection—sourced directly from Japan—are handcrafted to perfection. I opted for the Ume Yume, and the bartender patiently explained its flavors as I sipped—such a great way to start my palate experience!

A fun touch? We even got to choose our own chopsticks—I went for elegant 😊.

We started with cold dishes, each one beautifully plated, fresh, and delicately presented. The colors, flavors, aromas, and presentation were simply top-notch. One dish was better than the next! I wish you could smell the miso black cod—its rich umami flavor and buttery texture were an easy 10/10. And just when we thought we had seen it all, they surprised us with the final dish—the Imperial Seal, which turned out to be a black sesame dessert! Mind-blowing. 🤯

Every dish showcased incredible technique, and the flavors were expertly explained by the friendly staff, making the experience even more memorable.
