Master Lanzhou Noodle Express in Caulfield is small little store with an authentic taste of Chinese beef noodles.
As soon as you step inside, you're transported to the vibes of Lanzhou city in China's Gansu province, where the aroma of slow-cooked beef broth and the sight of hand-stretched noodles tantalise your senses.
The menu at Master Lanzhou Noodle Express revolves around the perfect trifecta of house-made lamian noodles, slow-cooked beef broth, and their signature chilli oil. The beef broth, simmered with 18 different spices imported directly from China, creates a rich and flavourful base that is truly authentic. Generous chunks of Australian beef are tenderly boiled for hours, ensuring each bite melts in your mouth with every slurp of broth and noodles.
What sets Master Lanzhou Noodle Express apart is the theatrical performance of the noodle masters who hand-stretch the dough to order, sometimes in as little as five seconds. It is impressive to watch! The dough, made in-house with a perfect combination of wheat flour and water, results in silky smooth noodles that complement the rich beef broth impeccably.
The combo meals offer a perfect introduction to the flavours of Lanzhou, with options that we tried like Noodle with Soybean Paste and Pork Mince and Braised Beef Noodle Soup. Each dish is a celebration of tradition and craftsmanship, reflecting the passion and dedication of founder Lu Gan. We loved it!
Whether you're stopping by for lunch or dinner, Master Lanzhou Noodle Express promises an unforgettable dining experience. Quick service too although it can get quite busy quickly as we experienced. With its commitment to authenticity and quality, it's no wonder this noodle bar is a favourite among locals and visitors alike!

Read moreWhen my bestie Pat asked me whether I want to try dry Noodles, it took me less than a second to answer with an up and down head node. He straightaway took me to Lanzhou and ordered the Special Beef Noodle under Dry Noodles.
Before we get into detail with the food, let's talk about the restaurant ambiance and other things. I fell in love with the color combination of Green and White. The seating is perfect and has utilized the space properly. However, the high chair seats which run in parallel with the walkway could have been avoided as it makes it hard to walk around when people have bags on their shoulders. The interior is maintained well, loved the green theme, and it is well-lit inside except for the seating. The staff is amiable.
It was my first dry noodles, and it was lip-smacking. Not too spicy yet flavorsome. You get to choose your noodles type and spiciness level. Don't forget to check their 'specials' window near the cash counter. Last time it was pork ears. I have tried Cucumbers and Mixed vegetables too.
Couple of things I wish was a bit different; first, EFTPOS minimum is $25, which is a bit old fashioned in this time. I know there are a lot of ATMs around, but it's an inconvenience. The pricing is perfect but could have been better if they lower it down to $12. The seating may seem a bit tight-packed at times, and you can't complain much as there is a campus next door. I hope they are going to expand the restaurant to a more prominent place or do some rearrangement of seating.
PS: If you are into noodles, then this place is a must-try. They have many outlets across Melbourne, and I wish all the very best.

Read moreThis is by far the worst customer service I’ve experienced at a Lanzhou beef noodle restaurant in Melbourne.
I regularly dine at other branches of this brand and have always had good experiences, but the service at this particular location was extremely disappointing.
I ordered a dish, but the wrong one was brought to my table. I simply wanted the correct dish I had originally ordered. However, the female staff member was incredibly rude and told me they could not remake the dish. She even implied that I might have ordered the wrong item myself. While I understand that mistakes can happen, I was absolutely certain that what I ordered was not what was served.
What made it worse was how she spoke to me—in a loud, harsh tone that caught the attention of the entire restaurant. She claimed she couldn’t verify what I had ordered and flatly refused to remake the correct dish. In the end, she forcibly canceled my order and gave me a refund, refusing to let me dine at all.
I enjoy the food from this brand, but this experience was truly disappointing and...
