Be prepared to wait is the advice I give anyone attempting to come here, we were apparently "lucky" for only waiting 30 minutes. The cafe design, interior is very comfortable and well designed. The Desserts are nice, but nothing we haven't seen in Melbourne before, others being Scoopy Milk Bar, Dessert Story etc

Despite making the claim of being a premium cafe they do not direct you to your table (you find one yourself), instead they will point you to the order counter to make your order straight away (no menus handed out, or signage outside for you to look at a menu during your 30 min wait to prepare), you will be given a buzzer to come collect your orders like you would in a food court so your experience is filled with the joyous buzz buzz we all love from time to time, collecting your order which is especially fun navigating when the cafe is busy (which is most of the time).

Lastly, we also had the added joy of being told-off by their staff when we wanted one of our cakes taken away (we asked for a box when we ordered, the cashier made a mistake and forgot to add the 50 cents) you would assume that would make a quick correction, apologise and place the cake in a box. But no not Sulbing.

Their Barista got offended, outright refused to give us a box until we paid, like we were asking for blood or something. No direction, just 'go pay'! When I asked do I leave the cake with you to box it? He snapped back "you pay first, then you get your box" premium cafe...

Having heard many positive things about Sulbing, I was eager to try their renowned snow ice desserts. With great anticipation, I ordered the Yuzu Matcha Sulbing and prepared myself for a delightful treat. While the experience was not entirely disappointing, I found a few aspects that could use some improvement.

To start, the snow ice at Sulbing is not flavored, which means it relies heavily on the toppings, sauces, and powders to create the desired taste. In my case, the ratio of snow ice to toppings was not quite right, leaving me with a significant amount of plain snow ice to consume. It wasn't until I reached the bottom of the dish that the flavors truly melded together, providing the taste sensation I had been anticipating.

Another issue I encountered was the matcha ice cream's consistency. It was quite solid, making it difficult to enjoy until the end of the dessert. This was a shame because the melted ice cream could have significantly enhanced the overall flavor of the snow ice. On the bright side, the quality of the snow ice itself was exceptional.

For first-time visitors to Sulbing, I would recommend opting for a classic choice such as the Mango Cheese Sulbing or their bestseller, Injeomi Sulbing. Alternatively, choose a dessert with plenty of sauce and toppings to avoid a predominantly plain snow ice experience.
