Very friendly staff. 10/10
Sadly, the ramen didn't meet our expectations. And that is what should be very important in a Ramen bar.
Hopefully this review will be taken seriously and maybe the dishes can be improved from this.
Here are our pain-points: Starter: We had the tantan salad. The ratio of meat to spices & oil was not great. That can be however accepted as the "nuances" of the chef. 6/10
The broths: We had Gyujan and Torijan The beef-broth was ok (7/10), however it was missing subtle flavours that we expected from a high-quality beef-bone-broth.
The chicken-broth was not good. 2/10 It didn't have the flavours that a chicken-broth should have. And, both broths were too salty by a lot. Salt helps to bring out flavours, but it shouldn't be the only thing in the dish.
The chashu was in our opinion a 6/10 It was okay, but not super great.
The ramen eggs were ok. 8/10
The bamboo in the chicken-broth was sweet pickled bamboo which tasted like it was bought already pre-made.
Noodles: The noodles were not great. Neither chewy nor smooth. They were "patzig" as you would say in German. They tasted exactly like the dried ramen from the supermarket. However, those should be made fresh when in a restaurant as the taste of fresh ramen is much superior. Even just from a cheap ramen-maker (the ones you can buy online for ~100€ that kneed the dough, let it rest and then extrude it) the noodles already taste better.
Those pieces need to be made in house and fresh. That is the most important thing for Ramen in our opinion.
I am not certain which things are made in house at Makotoya and which are bought as is, but in most great Ramen-places every piece of the dish is made in house to meet...

I got the spicy tantan ramen with extra chashu and my husband got the gyujan ramen. We both ordered karaage as a side and for drinks, we each got the lychee raspberry lemonade.
Ramen was the only thing authentic. It wasn't traditional ramen, but tasted more like fusion.. but you still taste the authenticity and the layering in the ramen broth, which is how it should really be.
Karaage was ok but not really special. We've had sooo much more karaage takes that was way better than their recipe and would definitely put it in our least favorite. It was juicy but not as crunchy as the real ones you get in Japan. It also didn't have much flavor, and tasted more like an ordinary piece of fried chicken, except juicier. The mayo dip was a big no as it all the more ruined the flavor.
