First of all and frankly, I must say that this restaurant offers some really delicious food. The ambiance is quite lovely, and the decor has a tasteful touch to it.

However, I have to mention a rather unpleasant encounter with the chef/boss. While we were waiting for our main courses, we noticed that the table next to us, who arrived much later than we did, had almost finished their main dishes. So, we politely asked the server how much longer it would take for our food to be ready (in a normal tone, with no intention to rush them). This is what exactly I said to the server “Excuse me, are the lamb and pigeon ready? I have waited for almost 40 minutes.” To our surprise, the server's attitude suddenly changed, and in a rather cold manner, they repeated twice that it would be served shortly.

We thought nothing more of it, assuming that our dishes might take a bit longer to prepare. But two minutes later, not only did our food arrive, but the chef himself came over. He questioned us, “Are you in a rush?”. I said, “No, I am just asking for when the dishes will be ready in a polite manner. And I am not lying about the 40 minutes waiting because the last time I wrote down my reviews for your dish is 40 minutes ago." He said, "I heard you mentioned that you've been waiting for too long? Let me clarify, you haven't been waiting for too long. We have a controller showing when each dish is making and serving. I'm the boss here, and this is our policy. If you show respect, you'll receive it in return!" With that, he turned and walked away, leaving us bewildered in front of our main courses.

Later, a female server came and asked us about the thing again. I repeated, but she avoided the important issues and spoke only about minor points. She did not mention about the chef attitudes, rather explained Dome is a “fine dining” restaurant not like “fast food”. "If you are in a rush, you should let us know in advance." Retour naar Antwerpen voor een culinaire lunch bij een onze ontdekkingen van 2021. We mochten ditmaal een tafel uitkiezen en dat werd er een aan het raam, fijn. Het menu voelde als a la carte want we hadden drie keuze mogelijkheden, prima. Als aperitief een Gewürztraminer Grand Cru Engelberg 2016 van Domaine Bechtold uit de Alsace die uitstekend beviel. Ernaast een tweetal hapjes. Carpaccio van zeebaars afgewerkt met piment d'espelette, verfijnde smaken. En een toastje van gebrande prei met roomkaas afgewerkt met forelkuit en zeste van limoen. Speciale smaken met prima textuur, heerlijk.

De trolley werd voorgereden, een stuk wafel werd rijkelijk belegd met tartaar van wit kalf, afgewerkt met zaden en een plak heerlijke wintertruffel die nu eens wel goed te proeven was.

Een tweede amuse kwam in een klein schaaltje. Mille-feuille van rode biet in een hartige saus van rode biet aangemaakt met mierikswortel en soja, afgewerkt met blaadjes Oost-Indische kers. Verrassend smaakvol.

De eerste begeleider werd beknopt gepresenteerd, een Oostenrijkse Zöbing Riesling 2019 van Hirsch, gemaakt in frisse medium complexe stijl met aangename mineraliteit. Uit de keuken een hele strakke presentatie met bereidingen van Normandische coquilles. Als basis tarama (een pikant aangemaakte crème van het koraal) die was afgedekt met plakken rauwe coquille bestrooid met furikake en centraal erop een quenelle karnemelk ijs. Een originele smakencombinatie waarbij de wijn lekkerder werd. (8,75)

Verder met Beaujolais Blanc 2020 van Château Cambon, een bio dynamisch gemaakte Chardonnay in minerale stijl. Uit de keuken een strakke minimalistische presentatie op een wit bord. Zeeduivelfilet op de barbecue gegrild met ernaast drie toefjes crème in de smaken citroen, pistache en zeewier, aan tafel afgewerkt met een royaal gevulde citrus vinaigrette. Prima cuisson en pure smaken met ruim voldoende afwisseling door de crèmepjes die hoog op smaak waren. De Chardonnay sloot naadloos aan, genieten. (9)

Voor bij het pièce rode Bordeaux Canon-Fronsac 2016 van Château Moulin Pey-Labrie, voornamelijk Merlot, boordevol zwart fruit met subtiele kruidigheid en een medium afdronk. Waarbij koteletjes van het Allaiton melklam uit l’Aveyron gegrild op houtskool, ernaast een dot crème van walnoot en peterselie afgewerkt met mosterdzaadjes en geroosterde sucrine (little gem) met plakjes lardo en Espelette peper. Aan tafel aangevuld met de eigen jus en Aligot (smeuïge aardappelpuree met heel veel jonge bergkaas op smaak gebracht met knoflook). De cuisson was uitstekend, sappig vlees met volle verfijnde smaak en krokant vetje. De romige Aligot met heerlijk knoflook aroma was top. De wijn vond ik ditmaal meer in balans, prima. (9,5)

De trolley werd voorgereden voor de bereiding van het pre dessert. Op de lepel Vacherin Mont D’Or afgewerkt met een noten en zaden crumble. Erg lekker.

Als dessertwijn een mousserende Mauzac Nature 2019 van Domaine Plageoles, troebel in het glas, redelijk complex met krachtige zuren en fijne mousse. Uit de keuken een tweetraps gerecht. Op het bord partjes en dunne plakken van Peer Williams gepocheerd in dennensiroop. In de beker ijs van pastinaak afgedekt met een sabayon op basis van Chartreuse, aan tafel aangevuld met een scheutje Chartreuse. Subtiele smaken die goed combineerden en door de frisse wijn werden aangevuld. (8,25)

Als afsluiter een viertal heerlijke friandises en een Clementine. De canelé en het gesuikerde fruitgelei waren mijn favorieten.

Bediening was uitstekend verzorgd op zeer correcte wijze.

Given that I have frequented hundreds of starred restaurants in different parts of the world (some of which you can find in my reviews here on maps) I want to explain well the reason for my low rating.

Two main reasons: the total lack of attention towards gluten free food and the endless waiting time.

I had reserved the table indicating that one of the guests would be celiac (my wife, true celiac, not simple intolerance). As soon as we sit at the table they tell us that they do not have gluten-free bread or any substitute. Which is absurd, both because we are talking about a starred restaurant that was warned in advance and because they brought me half a kilo of homemade bread, delicious, with lots of butter ... but my wife ... NOTHING. And therefore the experience is not the same!

It gets worse: along with the cheeses, my wife served croutons ... WITH GLUTEN! Luckily we noticed in time, otherwise it would have been really bad.

Finally, the time: 3 hours and 40 for their standard menu, really too much.

The food rating alone would deserve 4 stars, but for these things the correct rating should be ZERO, also considering that no one has apologized or offered us anything to balance the lack of attention.

Italiano originale qui: Premesso che ho frequentato centinaia di ristoranti stellati in diverse parti del mondo (alcuni dei quali li trovate nelle mie recensioni qui su maps) voglio spiegare bene il motivo del mio voto così basso.

Due motivi principali: la mancanza totale di attenzione nei confronti del cibo gluten free e il tempo interminabile di attesa.

Avevo riservato il tavolo indicando che uno degli ospiti sarebbe stato celiaco (mia moglie, celiaca vera, non semplice intolleranza). Appena seduti al tavolo ci dicono che non hanno pane senza glutine né qualsiasi cosa di sostitutivo. Il che è assurdo, sia perché stiamo parlando di un ristorante stellato avvisato preventivamente sia perché a me hanno portato mezzo chilo di pane fatto in casa, delizioso, con tanto di burro... ma a mia moglie... NIENTE. E quindi l'esperienza non è la stessa!

C'è di peggio: insieme ai formaggi a mia moglie hanno servito dei crostini... CON IL GLUTINE! Per fortuna ci siamo accorti in tempo, altrimenti sarebbe stata davvero male.

Infine, il tempo: 3 ore e 40 per il loro menù standard, veramente troppo.

La sola valutazione del cibo meriterebbe 4 stelle, ma per queste cose la votazione corretta dovrebbe essere ZERO, considerando anche che nessuno si è scusato né ci ha offerto qualcosa per bilanciare la scarsa...

Well what can I say. We were there with a group of food friends, who like a cool atmosphere and searching for great food experiences. What we got: - A nice looking location - a service chef that judged us without saying - food of course in a quality, but related to the price we had a lot of better restaurants that were half the price - duck was very raw, we gave it back - wine was ok. Pairing questionable - …the chocolate cake is too sweet, u didn‘t find any other taste than sugar and butter. No twist even not in the dessert… …at all it was not the experience with have searched for. It will suite the „old white men club“ and people who like a old fashioned atmosphere.

Well what can I say. We were there with a group of food friends, who like a cool atmosphere and searching for great food experiences. What we got: - A nice looking location - a service chef that judged us without saying - food of course in a quality, but related to the price we had a lot of better restaurants that were half the price - duck was very raw, we gave it back - wine was ok. Pairing questionable - …the chocolate cake is too sweet, u didn‘t find any other taste than sugar and butter.
