Pardon Brussels — Restaurant in Saint-Gilles - Sint-Gillis

When in Belgium, what do you think of when it comes to food? For me it is Belgium Waffles and it was important that we went some place that had authentic, quality waffles. After doing some research, I decided to go to Pardon Brussels which is close to our hotel. When you walk in, it's very quiet, intimate and there is plenty of seating. When it's busy, they'll open up a second room but while we were there it was one room only but still plenty of seating.

The waitstaff is wonderful, friendly and very helpful. She took our order, made suggestions and checked in on us several times to make sure we were happy. I ordered the Belgium Waffle and it was definitely one of the best I've ever had. I had a side of Hazelnut Chocolate and strawberries on the side and a coffee. It was so good that I ordered another to take back with me to the hotel.

This is the absolute best place in all of Brussels. Everyone on the entire wait staff was witty, funny and so helpful to us. The music, the decor, the surroundings, the vibes were immaculate. We ordered the Brussel Waffle Brunch and the Belgium Waffle Brunch and I promise you, it was the best thing we had eaten our entire trip. The Brussel waffle was stuffed with walnuts and had a nectarine jam and as well as a caramelized nectarine in the side. It was so great I offered to go hug the chef, they thought I was joking but I would of hugged whoever made this perfect creation. It was so good that we ordered a second one to share. The drinks were amazing, the food was delicious and the people just pushed it all over the edge.

I would move to Brussels just to eat here everyday. We met the owner and she was an amazing women with a beautiful soul and you can see and feel that her heart was involved in every aspect of the place. I wish we found this place sooner on our journey and I hope one day...

Pardon is a charming waffle café in the Parvis St Gilles in Brussels. The atmosphere is calm and relaxing. The staff is nice, attentive and friendly. They offer a variety of set menus for brunch but you can also build your waffle by choosing the base of the waffle (plain, chocolate chips, or cinnamon) and the toppings. I went for the cinnamon waffle with the fruit of the day - poached pear - and whipped cream simple but absolutely lovely.

I would recommend Pardon to anyone looking for a delicious waffle in Brussels off the beaten path. The staff is incredibly nice, the atmosphere is relaxing, and the waffles are delicious! My only suggestion is perhaps to add more savoury toppings for those of us with more...
