São Paulo must-visit restaurant alert!!! Banzeiro is famous for Amazonian river fish that is impossible to find in the U.S. (or even in most parts of Brazil). Many diners swear that the cuisine of Banzeiro comes to closest to what you’d find in Manaus, and it further adds to the restaurant’s credibility that many of its staff hail from Amazonas. Perhaps the most strongly recommended dish here is the grilled tambaqui, a giant Amazon river fish with massive mammal-like ribs, molars for teeth, and a body weight that can exceed 100 lb (not the ones at Banzeiro though thankfully). Speaking of ribs, I kid you not- we are talking about the meatiest fish ribs you can imagine on earth here. The tambaqui is caught fresh in Amazonas and then shuttled to São Paulo for diners at Banzeiro. The chefs here grill the fish to perfection and then bring the beast directly to your plate. Honestly, the juiciness and succulence of the fish ribs are otherworldly, to the extent you may forget you are eating seafood and think you are chomping on the finest Memphis ribs given the fish’s slightly crispy bark and the juicy, smoky, and heavenly stuff inside. Don’t forget to top it off with the home-made banana salad, fresh tomato salsa, river rice, and farofa made from tucupi (palm heart fruit)… you are in for a treat. Warning: portion sizes are gigantic- we had only 1/2 a fish and could barely finish!

Size is very big even it's a half fish, good for two person. Appetizer make sure to try the Bittersweet Tambaqui Ribs. It comes in four pieces, deep fried fish ribs in a sweet sauce. Tacacá is a kind of Amazon fish with pickled Jambu and shrimp, it's very sour if you are not a fan of sour you might want to skip it. The Caboclo Rice with Braised Shrimps is like paella but it's cooked with pickled jambu as well so it also taste sour. For dessert Discovermanus is an Amazon classic dessert, a little bit like chocolate moose cake, inside is a bit sour as well. But banana crème brûlée is delightful, instead of cream the base taste more like a banana purée. Our server is super friendly. He is from Amazon so he was able to recommend some classics for us to try. And told us how to eat each dish.

I couldn’t quite tell if it was delicious or confusing, but definitely memorable. Oh, and they literally served a dish with two ants on the plate. Yes, I ate them. Yes, on purpose. Overall, a really cool experience I’d still recommend if you’re ever in São Paulo. Just note that no one there speaks English although featured on Michelin guide—but hey, that’s what Google Translate (and awkward hand gestures) are for. 😅

Minha nota pro de Manaus é 5, seria 6 se pudesse, mas não pro de SP, explico:

A culinária amazônica é maravilhosa, pra mim entre as mais ricas do mundo. De Manaus a Belém, Novo Airão, Alter, onde quer que seja, sempre se come muito bem e com muito muito sabor.

Eis que a alegria com a chegada, consequente expectativa e, infelizmente, decepção com a unidade do banzeiro em SP foram todas bastante grandes.

Começo pela COMIDA, término pela EXPERIÊNCIA:

COMIDA:

Entrada: croquete de Tambaqui Principal: Pirarucu Amazônico

A entrada tão deliciosa em Manaus, vem, em SP, sem o mesmo capricho, queijo não derretido no interior, sem a pimenta e molho que acompanham o mesmo na sede. Insosso.

Já o pirarucu de fato a maior decepção, peixe que tem notório sabor e consistência agradável, veio sem ambos. Sem gosto de quase nada, com uma placa de queijo em cima e uma banana “sem sal” (sabor). A consistência emborrachada típica de peixes congelados (não estou dizendo que seja o caso, apenas uma analogia).

O melhor do meu prato foram as batatas. E convenhamos, não visitamos um restaurante de culinária tradicional específica e especial para comer batatas.

Tenho o privilégio de poder - fora de pandemia - visitar Manaus com frequência e sempre poder me deliciar com os pratos saborosos e aromáticos do original.

Não é questão de saudosismo, mas sim paladar.

Me senti mais longe do sabor do que os 4.000kms que separam uma cidade da outra. O tambaqui com bananas e arroz que sempre me faz ir além da conta num prato pra dois que insisto em tentar encarar sozinho, abdicando dos acompanhamentos sempre pra ficar com a estrela do prato, o peixe com crosta de castanhas finamente temperado, preciso. Salivo de me lembrar. Já o que comi hoje, não é esquecível meramente por ser bem mediano e assim deixar esse gosto amargo de decepção com o prato.

EXPERIÊNCIA

Sempre ressalto a todos como em todas as visitas sempre fui muito bem tratado em Manaus, muitas vezes chegando tarde por conta de atrasos em voos ou compromissos e sempre recebido com sorriso na cara mesmo na iminência do horário de fechamento. Vale lembrar que é o melhor da cidade lá e vive lotado.

Aqui em SP, contudo, onde a concorrência é infinitamente maior e é um célebre desconhecido o desejo em atrair clientes parece menor.

Liguei 5 mins antes de chegar, estava estacionando o carro, perguntando se haveria lugar a me sentar, fui informado com ênfase e nenhum desejo de atrair um potencial cliente, de que não “haveria mesa de qq maneira”. “Tempo de espera de 50 minutos no mínimo. Tudo reservado” e afins.

Como já havia estacionado e imaginava encontrar as mesmas delícias do Norte, insisti, valeria esperar, mesmo em pandemia, para minha surpresa ao chegar, várias meses vazias. Que permanecerão até eu terminar meu almoço, escrever esse Review é sem NENHUMA espera. Ou seja, muito me espanta que, na marola (banzeiro) dessa pandemia, em que todos os restaurantes sofrem com períodos fechados, o atendente (presumo maître) prefira deixar mesas vazias e não esboçar um desejo por trazer novos clientes.

Talvez ele estivesse desejoso de me “proteger” da decepção dos pratos que viriam a seguir.

Saio triste, mas veja que meu desejo aqui não é depreciar o restaurante. Adoro as receitas, o cuidado, me abriu novos mundos, mas sim garantir que essa introdução a culinária amazônica não a deprecie e abra essas portas pra outras pessoas.

Desejo profundamente que o de SP chegue a ser 60/70% do que o original é, ficarei feliz em voltar e notar o mesmo capricho e esmero da sede manauara. Se não, saudoso que estou, passado esse momento de complicações sanitárias, embarcarei de volta pra curtir um...
