They are freshly made each day, as are the handmade noodles. Having lived in China for six years, I would say this place is very authentic. The dipping sauce of black vinegar, chopped raw garlic, homemade chili oil and soy sauce was incredible. The food is prepared in front of us so it must be fresh.
