Another local gem – The Noodle Bistro! Bangers, bangers — I’m on a roll with these amazing local spots, and once again, this one shined through.
Let’s start with the pork: beautiful, tender strips, lightly seasoned and melt-in-your-mouth perfection. And the broth? OMG — what a gorgeous combo of fish sauce and Vietnamese spices. Pure flavor heaven.
The veggies were crisp, fresh, and had that perfect crunch that just elevated the broth even more. Now let’s talk about the noodles — silky, heavenly strands that soaked up all that delicious broth and curled up on my chopsticks like they wanted to be devoured.
I threw in one little chili for that extra kick, and it was just what the bowl needed.
Also ordered the fried spring rolls — not too greasy, with a nicely seasoned pork filling that paired perfectly with the dipping sauce.
And shout out to our beautiful, wonderful server — she was an absolute gem and made the whole experience even better.

Read moreUnfortunately I did not enjoy this place. I have been here twice just to be sure. I absolutely love ramen, but the ramen here had no flavour and the meat in it was not good. The soup base was very watery. Tonkotsu is not supposed to be like this. It tasted old, too. The fried chicken was greasy and had very little meat, the flavour was essentially just oil. I will say however the squid balls were pretty tasty. The service wasn't very friendly, not sure if the lady was having a bad day so I won't comment on it because we all go through things and she wasn't outwardly rude. The restaurant itself is quaint and reminds me very clearly of the restaurant that was there before (schnitzel house). Overall not a great experience either time. I’m pleased to say that after my first visit I’m so happy with this addition to Lindsay. We stuck to Japanese with Ika Geso Karaage, Chicken Gyoza and Ramen. All were good with the highlight being the Ramen. The Tonkatsu broth was excellent, the spicy version I had delivered a pleasant kick and my wife’s miso version was even better. The leftover decor from the little schnitzel house reminded me of some of my favourite hole in the wall Korean places from Toronto’s Bloor & Christie Korea town.
