This restaurant is what Pembroke has been needing for so long. Having grown up and moved from Cambridge (Galt) Ontario 3 years ago I am happy to see the downtown begin to take on a “new” identity. The atmosphere that TBW has created is fantastic, the decor, the lighting and use of different materials to create a mood is wonderful. You can tell that a lot of care has been made. Upon arriving to the restaurant our table wasn’t quite ready so we were invited to the bar to order a drink. We both loved this gesture and the bar is also beautifully designed. The bartender was friendly and polite and made a wonderful drink for both of us. After moving upstairs to dine, the food we ordered was outstanding. We had mussels and bone marrow to start. The bone marrow was really good and quite a strong start to the rest of our meal. The Atlantic salmon was hot, perfectly seared and plated beautifully. The citrus sauce was incredible. My fiancé had the Vinter steak and loved it as well! All of the ingredients were top quality and evidently fresh. Service was great and the sous chef made their rounds to speak to guests at the end of the night which I found to be a commendable act to get a feel for the people dining in your restaurant. I am looking forward to returning and I would most definitely recommend this restaurant to others.

We celebrated my in-laws’ 53rd anniversary at The Butcher’s Wife in Pembroke last night, and it was one of the better dining experiences we’ve had in ages. From the moment we walked in, the vibe was on point. The music set the mood perfectly, the ambiance was cozy but elegant, and the service? Absolutely top tier. Our server was kind, attentive, and made the whole evening feel seamless, almost as tho we were the only ones there. Three of us ordered the schnitzel, which was crispy, juicy, perfectly seasoned, and my mother-in-law raved about the chicken supreme. The surprise chocolate mousse from the chef? That was the cherry on top! It was thoughtful, unexpected, and ridiculously delicious. Thank you again for that sweet touch. Also, I’d be negligent if I didn’t give a special shoutout to the young gentleman who came by at the end to clear our bill. Dressed all in black, carrying himself like a total pro, I told our server he gave me Johnny Depp vibes. Only to realize after I left that I meant Johnny Castle from Dirty Dancing. He totally screamed Kellerman’s energy. Somebody give that boy a raise and a watermelon to carry. Huge thanks to everyone that helped make our night so memorable. We’ll 100% be back!

The prices are reasonable, and it's clear they put care and quality into every dish. We will definitely be returning—I can’t wait to explore more of the menu!

My wife asked me to make a reservation here and of course I listened. I went in expecting the same mediocre service and food that is served at all the other Pembroke restaurants but wow was I mistaken.

The Butchers Wife has a modern feeling to it while still managing to be cozy and warm. Tables were dressed in their finest black and white with the shiny cutlery delicately placed and spotless glasses waiting to be filled.

I rode my motorcycle to the bay of Fundy last summer, seeking fresh mussels and now know it was a wasted trip. The starter mussels were absolutely delicious and my only complaint about their very generous serving was that there wasn’t more. I love mussels.

Their salmon was truly a great dish. This meal was plated and dressed like something you’d see on the cover of a magazine. Food art one could say, and it tasted as good as it looked. A blending of delicate flavours paired with a sweetness complemented the perfectly prepared fillet.

And dessert was a treat as well. I kept it light with the mousse and was delighted at the dish. Who knew that a sweet mousse, a bit of chocolate and sour cream would combine to be a decadent dish worthy of savouring over and over again.

As incredible as the meal was, cozy and warm that the restaurant was, the staff was even better. Finally a place in town that has staff that are friendly, professional, attentive and yet blend in to the background. There was plenty of staff who were all busy and working hard but you were never bothered by their movements, never were intrusive, and always quick to assist. Our server had near perfect timing and read the table. She knew the menu, the specials and made recommendations. She definitely helped make our date night memorable.

If you are looking for a memorable experience, a night out with your spouse, or a special occasion with friends and family, I highly recommend The Butcher’s Wife...

I was in Pembroke overnight as I had a work engagement in the morning and on the recommendation of the front desk staff at my hotel, I went to The Butcher’s Wife for dinner. The staff there were very friendly and attentive. Even though I didn’t have a reservation, I was seated immediately. The server was very nice, took care of every need without being too much. The food itself was ok, but I got the feeling that the kitchen was rushing and that perhaps not everything was made to order. I ordered appetizers and a main and from the time I sat down to the time I finished my last bite was just over 30 minutes. That would be fine for a quick meal but in a nicer restaurant, it felt very rushed. My appetizer was the saffron shrimps. Very nice dish, with a wonderful sauce. Would have liked some bread for the table to wipe it up. The dish came with 2 baguette crisps but 90% of the flavour was left on the plate. My main was the schnitzel, with a mushroom sauce that the server said was their best. Great crisp on the schnitzel but too much of it so that I could barely taste the pork loin. The mushroom sauce was well under seasoned, and had a thick consistency that felt like it had been sitting in the pan too long and had started to congeal. Not impressed. Side of vegetables and mashed potatoes were nothing special, particularly the potatoes which had no seasoning at all. Maybe the kitchen was looking at the clock (I arrived 1.5 hours before closing) or just had an off night but an underwhelming food experience.
