Bottom line first: I had high expectations, and they were not completely met.

Let's unpack this. I'm a big fan of the broader La Tanière group of restaurants. Plain and simple love each of them. Recently I had the privilege to enjoy cocktails at La Tanière before our stunning dinner. I had my "calibration cocktail" : an old fashioned. It was stunning.

So when they announced they were opening a Speakeasy it became a priority for me to go, which I was able to do only 2 weeks after opening. My expectations were VERY HIGH.

Conclusion : it was good but I'm slightly disappointed.

(1) Speakeasy: not quite the atmosphere of a Speakeasy. We were seated outdoors as they cannot accommodate a group of 6 indoors. Not quite same video. I'll come back to experience the indoor room. A Speakeasy comes with a distinct atmosphere, a distinct décor, and stunning cocktails.

(2) Cocktail bar or Restaurant with cocktails : to me that's the biggest question. The food is delicious, but it comes across as a food first type of place, cocktails second. A sandwich? Really at a Speakeasy? NO NO NO (irrespective of its quality). You want bite size food. Don't get me wrong, it's delicious, but there's a dissonance between very principles of a Speakeasy and the food.

(3) Old Fashioned - it was good, but it was not as good as at La Tanière (despite me asking specifically this question, and being reassured it'd be exactly the same).

I do believe a few limited tweaks would make a difference, I will return again next month, and will update.

My reference in North America remains Deep Dive in Seattle, and Buck and Breck in...

Avis mitigé malheureusement... nous y sommes allés une 1ere fois pour prendre un verre un soir en pleine semaine, il n’y avait quasi personne. On nous a servi de l’eau, un shot sans alcool de bienvenue à base de gingembre et miel délicieux. Et on a pris des cocktails. A plusieurs reprises on nous a proposé de commander quelque chose à grignoter mais nous avions manger tard et vraiment pas faim. Nous y avions passé un trés bon moment : les cocktails très bons, une jolie terrasse, l’ambiance est cosy, le serveur aux petits soins. Nous décidons d’y revenir quelques jours plus tard, un samedi soir et cette fois pour tester une planche grignotage qui nous avait été tellement recommandée lors de notre 1er passage. En arrivant on se présente à l’accueil pour savoir si il y a de la place. L’hôtesse charmante nous propose une table mais disponible pour 45 min seulement. On accepte. Elle nous installe dans un carré canapé table basse en terrasse. On est très bien installés. Un 1er serveur vient nous voir, nous distribue la carte et nous dit alors vous êtes pressés, on va venir rapidement prendre votre commande. OK. Entre temps on nous sert de l’eau mais pas de shot de bienvenue... Bon OK pas grave, c’est soir de rush. Un 2e serveur arrive le même que le 1er soir pour ́nous expliquer la carte. On lui dit qu'on est déjà venu et qu’on avait apprécié, du coup c’est pas la peine qu'il nous répète les explications. Il nous dit que oui en effet il se rappelle et il nous laisse en nous rappelant qu'il est désolé mais qu’il y a beaucoup de réservations et qu'on ne pourra pas prendre notre temps. On était au courant...OK passons. On appelle un serveur pour commander pour éviter de perdre du temps du coup. Il nous dit que c'est pas lui, qu’il appelle son collègue. Il revient finalement pour prendre notre commande car on lui a dit qu'on devait vite partir. On commande donc bos 3 boissons + une planche mixte et une planche de mezze. Il nous le déconseille car c’est très copieux. OK bon on commande uniquement la planche mixte. Le serveur précédent revient et nous dit vous êtes sûrs que vous voulez commander une planche, vous aurez le temps parce que vous avez la table pour 45 min depuis qu'on vous a installé. Heu, là ça commence à être lourd et ça gâche un peu le moment. Bref, on insite. On nous sert et en effet la planche est très bonne mais assez peu généreuse, je regrette de ne pas avoir pris de photos, je me suis dit ça c’est la planche spéciale t’as pas le temps. 3 petits morceaux de fromage, une chiffonnade de jambon de pays et une dizaine de rondelles de 2 sorte de saucisson et quelques condiments. C’était très bon, les produits de qualité. On est parti pile au bout de 45 minutes et on s’est installé un peu plus loin en attendant le feu d'artifice. J’ai laissé le pourboire minimum parce que faut pas exagérer, soit on laisse les clients profiter de leur moment, soit on leur dit qu’il n’y a pas de dispo mais venir nous dire 4 fois en moins de 45 minutes qu’on doit laisser la place c’est très pénible. Surtout que ce que l’on consomme c’est certes bons mais c'est pas gratuits non plus, ́la moindre des choses c'est de ́nous permettre d’en profiter. L’intention n’était peut être pas mauvaise mais c’était...

Before our dinner at Tanière³, my fiancée and I stopped into Vieux Carré for some pre-dinner cocktails, and it was an absolutely fantastic choice! I believe it's part of the same restaurant group, and you can tell by the quality. The bar is connected to Bistro L'Orygine and the space itself is just beautiful – very elevated, stylish, and incredibly inviting. It has a sophisticated New Orleans kind of feel.

The staff were brilliant. They were really engaging, offered excellent suggestions, and even convinced me to try Absinthe for the first time, which I surprisingly enjoyed! It was a cool experience. The cocktails themselves were top-notch, expertly crafted and delicious.

Vieux Carré is definitely a great spot. Whether you're looking for a sophisticated date night location or a place for fantastic cocktails with friends, this hits all the right notes. Highly recommend checking it out when you're in...

People use the term "speak easy" as a guide to greatness but this bar, well it should be what every speak easy should be measured against. You have no idea the joys that are on the inside by the outside, but once you cross the threshold you are transported both back in time but with an elegant nod to the present and to the farm to table mentality of its parent restaurant down the stairs. Cocktails which are hand crafted from ingredients and alcohol only from the province. Staff who are personable, educated and articulate. Drinks that are clever but easy to be around. Not pretentious, classic is the word to use. Please go, but reserve, it's Quebec City's hidden gem. We will absolutely be back.
