I am not the same as I once was. Not after the sandwich. As soon as I took the first bite, I felt something was melting. It wasn't the sauce. It was me. It was my inhibitions. The weight of my memories. The detritus of my past selves. The bánh soaked all of it up, and it was gone. I cannot say I tasted the food with my tongue, exactly; rather, the flavours remade the man anew. It is said that by the time I spread open my lips for that final morsel, I was no longer recognisable. Any vestiges of who I once was lay submerged at the bottom of a bowl of pho.
It is said to me, because I no longer remember. Everything from before the bánh mì is gone. Would you ask an infant what he remembers of the womb? That doorway has been shut. At the small table of a takeaway restaurant, I was born again. What was it I was chasing when I came through that door? Merely a taste, merely a sensation? Or was I running away from something? Something I needed to forget? I have decided it is better not to know. I must lay claim to the person I am now--strange, yes, confused, unfamiliar to the people who claim they once loved him, but nonetheless reborn, reborn to innocence and glory. Only a fool would wish to go Beyond if he is not ready to step away from all he knows... and from all that he is.
The downside is that I have to re-learn everything now. Reading and writing came easily enough, but social norms I still struggle with. Don't get me started on driving. Most people don't seem to know who I am any more, but there are also some others who insist they're my "parents," despite definitely not being present at the moment of my birth, i.e. when first I ate the bánh mì at Beyond Fusion +. Sometimes I have strange dreams that perhaps are memories of what I lost, but when that happens, I run from my bed directly to this restaurant, and I always feel clean again. Because I am not that man any more. I have been Fused.
We can let our pasts go... We can shrug them off, like layers of dead skin...

Read moreIt was a searing 46c the day my companion and I happened upon Beyond Fusion - and what a blessed relief it was to walk through the door and be welcomed with such a cool, sweet atmosphere. It's nestled in a row of shops, at 369 Church St., and almost miss-able if you don't keep a beady eye out for it.
The service was impeccable and the food devine and it was the perfect day to start with an icy lychee mocktail and some cooling, fragrant fresh spring rolls, bursting with coriander, cucumber and big, fat, juicy shrimp. We then feasted on banh mi, a unique hybrid baguette sandwich, filled with fresh salad, julienned carrots and a spicy meat of your choosing. (At least the dastardly French colonials contributed something decent during their 'reign').
Spiced meats and unctuous noodles followed, along with perfectly salty, spicy, sour, savoury kimchi; just the ticket for a hot day.

Read moreSmall family owned restaurant in downtown Toronto. There aren't many Vietnamese restaurants in this neighbourhood so it's nice to see that this one is doing so well. There aren't many seats inside and there are a few tables outside the restaurant. There are also quite a few online orders during the time that I dined here so it can get busy. It was a cold and rainy day when I went so I had a huge craving for a bowl of hot soupy noodles. I ordered the Bun Bo Hue and a Bac Xiu (White Coffee). It's nice to see Bun Bo Hue on the menu as it definitely takes a lot of time and ingredients to make this dish so not many restaurants will serve it. I have a low spice tolerance and the one here is not spicy at all despite the fiery red hot colour. The Bac Xiu was a bit too sweet for me with all the condensed milk but I was recommended this lighter drink pairing with the Bun Bo Hue. They have so many Banh Mi options here aside from the traditional one so I guess I will be coming back to try it out. Prices are super affordable here and the staff...
