Beautiful metaphysical interpretations of food as each dish has the history and quality of ingredients combined with a mastery of flavours that truly reflects the deep knowledge and creativity that the entire menu brings. LSL has an 11-course Tasting Menu priced at $680 per person with a $300 wine pairing option. My friend and I chose the wine pairing for this dinner. LSL stands for Leroy Saito Le Squer. With the harmonious combination of 3 masters including Chef Didier Leroy, 2-star Michelin Chef Masaki Saito and 3-star Michelin Chef Le Squer, LSL creates a unique and special French-Japanese culinary feast that will certainly become a highlight in the world’s culinary creations. Regarding the menu and the way the dishes are prepared, the combination of flavors that I experienced at LSL was very rich and harmonious, which surprised both my friend and I. LSL’s space is very small and cozy, with a maximum of only 9 diners per night. Everyone at LSL made sure that all the diners had a great experience while dining at the restaurant. Chef Dider was present throughout the evening which made the experience even more special as my friend and I got to interact with him constantly. I think this is what made the meal even more special as it would be hard to get that kind of personal attention in a much larger restaurant. The meal started with three canapés, a glass of campari with ginger, foie gras with coffee and passion fruit and a plate of comte tartare cheese with Vin jaune. The meal started off very interestingly with each dish having a very distinctive and rich flavour. The classic vichyssoise was delicious, cold potato and leek soup, with the leek being a special type of garlic from Japan then topped with uni, yuzu sorbet and shiso oil. The yuzu sorbet is an interesting addition as it transforms a cold soup into a colder ingredient, yet it enriches the entire soup. The spaghetti is sourced directly from Le Cinq, a 3-Michelin-starred restaurant from the Four Seasons Paris and finally in Toronto, made by 3-Michelin-starred chef Christian Le Squer. Chef Didier’s signature tomato dish is culinary perfection as it features seasonal Shizuoka tomatoes hand-picked from Japan, akami, a medium-fat cut of bluefin tuna from celebrity chef Masaki Saito, and a sumptuous caviar from sturgeon with gold leaf. The harmonious combination of special ingredients elevates each bite to a new level. CA$980 / person ~ 17.9 million VND (US$720)

I would highly recommend everyone who appreciates creative and delicate food at least try LSL once in their life. And trust me, if you try it once, you would definitely want to bring your family or friends who you love the most to try it with you as well. The whole experience in LSL was pleasantly surprising. They're into the details from the moment you walk into the restaurant. It would be very difficult to describe the taste of every dish, but what I can say is you can taste and feel all the details and effort that they make on every single bite. For example, the temperature of the food was just about right. The combination of every ingredient has the right balance, you can taste everything, you can feel the contrast between different layers but without conflict. I'm a person who likes surprises a lot, and I am surprised by every single course. They all look very exquisite and well-designed, but what surprised me the most is their taste. You can never expect how they taste by looking at them. For example, I've tried Wagyu in different places with different cooking styles already, but Chef Didier and his team made it uniquely, and it was simply the best Wagyu steak I had ever tried in my life. You can never imagine how well the Japanese herbs and Wagyu match together. The order of every course is very well considered as well. Some of the dishes may have a very strong taste (for example, like Foie Gras) but the one right next to it was harmonized with the taste of foie gras perfectly. What I really love about this place is the time between every course is not long and boring. Chef Didier and his staff tried to explain to us their idea of every dish, how they pick the ingredients and what they want to make with creativity. We didn't feel that we were waiting for the next dishes. Overall, if you want to have an unforgettable dining experience with the most skillful chef and the best quality of food, LSL is totally worth it.

Their 9-course tasting menu ($680 per person) started with a trio of small bites that we’re told to eat from the front to back: Beginning with a ginger and citrus Campari foam that burst in the mouth. It’s not overpowering but did wake up the palette and cleanse it for the second. The hairy crab tart’s briny flavour screamed of ocean (in a good way) so the crustacean was highlighted in the bite. We go from sour to salty. Lastly, a sweet bite with a generous portion of foie gras sandwiched between crunchy coffee crisps and topped with passionfruit jelly. Imagine having a really decadent sweet-and-salty candy bar. LSL doesn’t keep you waiting for their signature dish: a peeled Amela tomato stuffed with finely diced tuna and topped with Kristal caviar. It’s something Chef Didier Leroy created for a dinner with Yo-Yo Ma that made him cry. It looks deceptively simple and features expensive ingredients (an $8 tomato for one) that gets diners excited. Having tried the caviar by itself, the ingredient solo would have been very pungent but once combined with the fruit and fish became amazingly fresh and light. That natural sweetness continues with the Hokkaido scallop crudo, a dish that sounds Japanese but has a unique European flair. The scallop was meaty and fresh, topped with top-shelf uni flown in from Japan. It makes for a lusciously creamy bite. Yet, what surprised me most were the crunchy bits of dehydrated scallop reduction that gave the dish crunch and an umami touch. My favourite plate was the crispy scale amadai where the fish was flash fried, so the meat becomes flaky, and the scales create a crunchy topping. It arrived with a warm ball of brioche that was perfect for wiping up every drop of the delicious beurre blanc. Good to the last drop. This is a long review for the rest go to Gastro World.

A Culinary Delight with a Philosophical Twist

As someone who appreciates both culinary excellence and atmosphere, I can confidently say that this restaurant is truly in a league of its own in Toronto. With its remarkable food and a chef who embodies the perfect blend of interesting, philosophical and downright cool.

The food is nothing short of amazing. Each dish presented a burst of flavors and an exquisite presentation that delighted both the senses and the palate. From the appetizers to the main courses, every bite was filled with creativity and passion. It is evident that the kitchen team takes pride in crafting unique and memorable culinary experiences, while at the same time managing to not take themselves or the process too seriously.

But what really sets this restaurant apart is its chef, who is not only an extraordinary master of the culinary art but also an intellectual in his own right. Engaging in conversations with him, one can expect to be captivated by his philosophical musings and unique perspective on life. His ability to infuse his philosophies into the culinary creations brings a new dimension to the dining experience, making it truly unforgettable. The rest of staff members were attentive, friendly, knowledgeable and interesting in their own right.

Beyond the exceptional food and the chef's philosophical musings on food and life, the overall ambiance and service deserve the highest levels of commendation. The restaurant's atmosphere is inviting and cozy, creating the perfect setting. The group we were dining with each noted that we lost sense of time and all worries - it was truly a captivating dream from start to finish.

If you are seeking a restaurant in Toronto that goes beyond serving world class fine dining, this is the place for you. With its blend of amazing cuisine and an inviting ambiance, the visit left us way beyond satisfied - more like inspired.

I think Canada has its first three star restaurant. Will be...
