I was here with a group from work. I have never been in a chop resuraunt so I honestly did not know what to expect. Unfortunately I do not remember our servers name, but she was very good. She was knowledgable on the menu items and just a very nice lady. I wish I remembered her name because I would tell you to sit in her section if you go here. One of the others ordered a bunch off appetizers, crab cakes, onion rings and wings. Thought these were a bit of an odd choice being in a steakhouse and all, but they were all quite good. The onion rings were quite a surprise. Super crispy and great flavor. I had the New York steak, and just fries and gravy as a side. The fries were ok, but nothing to write home about, but the steak on the other hand, first off it was like $45. Which for me seemed a bit steep, (yes, I am super cheap) but seeing as this is a higher end place, I went with it. So the other thing I should mention is that I am one of the weird people of the world that likes the flavor of meat. Not the stuff that gets put on it, not the parts that get burnt when it is cooked. Just the taste of the meat. I like my steak blue rare. So yeah, it does not take long to cook. Most places, even steak houses seem to have issues getting this right. It is either still cold in the middle or more of a rare. I asked the waitress if they could do a blue rare properly, she confidently said no problem. And she was right. They nailed it. Nice color, great flavor. No major fat or grissel parts that make it chewy. I don't remember how big the menu said the steak was, I was not overly worried about it at the time, but it has been a long time since I went to this type of restaurant and could not finish a meal. The steak was huge! Kind of threw the concept of 1/4 of your plate being meat and half of it being veggies. This steak took up half the plate. And I think there was a tomato or something there, but it was not important. So overall, there was a group of 7 of us. A few drinks each, a bunch of appys and I think most of us barely made it through our meals because they were that big, the bill was just under $700. So $100 each for an amazing dinner. Read moreWe dined at chop for my fiance's birthday last night and had a very underwhelming experience. We frequent Hy's for steakhouse dining but wanted to try somewhere new, which we believed Chop to be a good comparison. Safe to say it is not.
I will not discredit that our server was fantastic, the cocktail selection/preparation was astounding, and the beef dry-ribs appetizer was perfectly executed; however, our steaks, unfortunately, were the least favourable part of our dining experience.
I ordered a medium-rare, Chicago-style, smoked ribeye, which came out extremely rare with an ice-cold centre - opposed to a warm centre - and it was very bland (likely due to the lack of cook time). My entire plate was taken back and my steak was placed back on the grill to cook to the desired temp. I also had to request additional seasoning salt on the side to enhance the lack of flavour. By the time I received my plate back, the accompaniments were cold. Although prepared correctly the second time, a re-cooked steak does not compare to being prepared correctly the first time. My fiancé ordered an 11oz medium New York strip, which was prepared medium rare; he still ate his steak as it still tasted okay, but had to eat his meal alone to avoid eating a cold steak by the time mine had arrived.
Although our server did apologize and offered me a glass of Prosecco to compensate (which I had to refuse because I was driving), a manager did not do a table check following these concerns, which is very strange considering this is a standard within any up-scale restaurant.
That being said, the price of dining here is very cost-effective - in comparison to Hy's or 529 - so I wasn't too upset, but I did have higher expectations as Chop is branded as...

The restaurant itself is one of 5 connected to the Sandman hotel near the Winnipeg Airport, we're thankful that the connections between the restaurant and the hotel are all inside as there was a blizzard outside (which was one of the reasons why our flight was cancelled). The place was dimmly lit which added a nice and private atmosphere. Given that we were eating at about 11 at night the place wasnt packed (maybe 3-5 groups). The restaurant is split into two sections, a bar (which was more busy) and the restaurant. Given the two sides were so close together, surprisingly the noise from the bar wasn't noticeable from the restaurant. The place was furnished in a way that added a bit of color and modern like feel to the restaurant, it was interesting that the washrooms were also designed to match (one such oddity was a fireplace about 4 feet up the wall). We ordered a full rack of ribs, beef burger and French onion soup to share. For dessert we went with the sampler trio which came with a blueberry cheesecake, chocolate creme dessert, and creme brulee. Everything was delicious and visually pleasing. The server was very friendly and didn't ask for a tip (scratching out the space on the receipt) we gave a tip anyways.
