Absolutely amazing experience for a pair of coffee hounds like us! Pictured here is our flight of coffees - perfectly portioned tasters of their Robin (light), Raven (espresso) and Nighthawk (dark) coffees, complete with tasting notes and origin information. We absolutely loved it, and then followed it up with a full sized flat white for Himself, and a cortado for me (not to mention a divine herb and cheese scone). Full intentions of returning multiple times to sample ALL roasts, and really gain solid footing in the world of specialty coffee. Highly, HIGHLY recommend on both quality of product and service - although please forgive me as I can't recall the name of our excellent server on the Sunday we visited (charming, enthusiastic, and willing to share her own knowledge with us!). Early Bird is the absolute gem of Woodstock. It is run by a phenomenal couple who work very hard to provide exceptional coffee. This company is what every small town dreams of. They support their community in every way possible, they provide exceptional service (way Way WAY beyond what could ever be expected), and they roast some darn good coffee..beyond darn good. Exceptional coffee. Do yourself a favour and visit these guys before any of those over-rated chain coffee places. My wife and I dropped by to pick up a pound of coffee so that I could give it a try. I love a full body dark roast, so I picked up their night hawk dark. This morning I ground and brewed said coffee with eager anticipation. I have been drinking coffee for over forty years and have tried almost every coffee know to man. The Night Hawk coffee had a very nice taste, Floral, hint of berries. Very smooth to the palette. Unfortunately I don’t think the beans were roasted enough.
