Where to start... I decided NOT to read reviews on this place before I came and kept an open mind. My wife is a native and I have been in CR since 1997, so actually before Los Sueños existed and we have actually lived very close here +15 years... so watched all the changes.
All this said we have travelled the world many many times and when someone tells me genuine italian, i have some expectations... Milan, Roma, Venice, Florence, Sicily, so North to Crotia and South to the sea, I have been there and enjoyed meals with family, associates and friends. ... never have I had an Italian kitchen, definitely not mamma, feed me less than piping hot pasta, let alone have some undercooked parts. I am not unaware that a kitchen of this size must make a tray for day and possibly put in a cooler. But if you dont check your food or your chef for quality you loose your name and no respectable italian would allow that.
If you make wonderful pizza then great... do that and do it well. As for serving a full italian menu, I am sorry but believe you are missing things and hope you can improve this or would be best to continue with pizza
The presentatation here is not 5 start but it is nice and many italian meals are served out the door of a homes kitchen so no problem there.
Maybe pay attention to customers requests at server level, add some roasted garlic to the table perhaps. Be careful to cook a pasta so it is not chewy across parts. For goodness sake keep water on the table or come back with water before having to ask or red flag a server and maybe just ask someone if they are happy or say thank you...
Food on more than one plate was cold and no excuse for that when served on hot metal craffe. Sorry but no.
Since we were here to celebrate anniversary I am just dissappointed in simple hot meal.
On a normal day this is a 3 star establishment so I am giving you 3 stars as benefit of doubt. We wont be back but Im keeping hope...

Read moreWe ordered pizza and gnocchi - the pizza was excellent; the Bolognese on the gnocchi is different but perfect for this hot and humid weather. The tiramisu was really excellent, truly authentic (could skip the dried flowers, it affects the smooth texture of the creamy taste but easily avoided as it is only sprinkled on the side).
The speck we had was really good too. The service is excellent too with large servings ... So why the missing star? It's the burratta... It was sour but it seems to be a miss or hit issue. The table before us had no issues. We got the last one with our speck. My six year old loves burratta and she spat it out and said it was sour. We thought that it was a mistake but it really was sour. They comp'd the burratta and speck but hubby still gave a extra 10,000 colones tip because the service was really good and the sour burratta is not the fault of servers or cook. The management needs to figure out to maintain the burratta because it seems we weren't the only ones based on past reviews.
