I'm giving them a begrudging 4 stars because my wife thinks that they deserve 4, though I think 3 is more appropriate.
The food was good and good quality, but portion sizes were small, seasoning too light and prices too high.
The carpacio was not impressive, more like over cooked lunch meat than a thin filet and more clumps than slices.
I had the ravioli with butter and sage which was good, but because they are interested in charging another 1000 colones didn't have enough parmesan. I tried to substitute plain salt, but the grinders were all clogged. There was also no garnish at all, not even a sprig of parsley. A side salad would have been a reasonable addition.
The wife's chicken Marsala was good, but again small portion sizes were the issue. She really liked the vegetables.
They didn't have large bottles of water so we ended up with two, more expensive, small bottles.
The menu prices don't reflect tax like most places do and they don't include tips, as expected. To then charge additional for parmesan or bread is petty. For these very high tourist prices you should expect, and get, more.

This Italian restaurant is so good. If you are in Playas del Coco and looking for a delicious pasta meal this is the place. The owner, Jose, cares about not just making a buck but also the environment! This is truly amazing because in todays world this is rare. In the photos below you’ll see that they created a custom made table around an old tree and did not cut it to fit more seats like other restaurants have done.
Personally, I will always support a business that is environmentally conscious and values the planet we all call home.
Aside from that, the service is amazing. We are always greeted by friendly staff, offered a glass of water (some restaurants like the Italian restaurant next to Verde Salvia - review coming - will make you pay ($10) for water that comes in a plastic bottle as they don’t offer ‘house’ water or tap.) Tap water in Costa Rica is safe, there’s no reason, other than preference, to pay $10 for water.
So, Salda Verde is one of my top Italian restaurants in Playa del Coco for their food, ambiance, and friendly staff.

My families surprised me for my bday and the food was great, and both the waiter and bartender were excellent. In particular, the bartender was incredibly attentive and made my drink exactly how I wanted it. She really listened to my preferences and delivered a perfect spicy margarita.
The chef also deserves high praise. All the dishes I tried had excellent flavor, and the ingredients tasted fresh and high-quality. I especially enjoyed the shrimp fettuccine, which was perfectly cooked and had a delicious sauce. And the pizza was outstanding - you could really taste the freshness of the ingredients.
