I have been in Calvi now for two weeks and I’ve eaten in a bunch of restaurants. Some streets in the center of town and some in the walking section right by the marina with the expensive boats. This is a restaurant that’s out of town about four or five minutes by car along the coast that has absolutely world class food. A wonderful plate of the owners own garden grown tomatoes in a delicate vinaigrette. Thinly sliced covering the whole plate some red some purple. Just perfect. They have a roast on a spit with roasted vegetables and potatoes. That is the finest rotisserie that I have eaten since I used to do it myself 50 years ago when I would take a whole lamb and have a party once a year and marinate the lamb for 24 hours beforehand in olive oil and wine and herbs and spices. The meat is just perfect. The vegetables are perfect. The potatoes are perfect. The au jus is perfect. I had a glass of wonderful light, red wine and a bottle of sparkling water. After the meal, I went and shook their hand of the chef. This is all done outside in front of you. The service is impeccable. The ambience is impeccable. The total cost was €47. I’m going to stay another week and I will go there every single night And have a different meal. I don’t usually give reviews like this. I travel through Europe every summer on my motorcycle. This is the first time I have been in Corsica. Many years ago, I had a dear friend who was dying in the hospital and as he was dying, we were talking about the wonderful meals we had had together. Someday, if I’m on my deathbed and somebody’s talking to me and the subject of wonderful meals comes up, I will mention this meal. It was startlingly good. I went. I went the second night and I had a wonderful goat cheese with a Peare card underneath and a salad and it was wonderful. I then ordered cannelloni. It was not cannelloni. It was a lasagna and the noodles were very much overcooked, even though the taste was good Cannelloni as tubular pasta, and all real pasta should be al dente and this was soft and mushy, but the taste was good. I had the coppa as a starter which was served with lettuce, a fried piece of sausage, some pickled and grilled veggies, and what must have been a fresh cheese that was a bit like a foam. The coppa was ok but all together the dish did not impress me with any out of the ordinary flavour combinations. If you are going here in the near future I would have chosen the clam soup which my partner had, it was a more impressive dish with simple yet defined flavors.
For the main course I chose the long braised lamb with a mashed potato cake and hazel nut. It was a stout dish with a nice amount of lamb flavor. It might have lacked a bit of finess but It was what one could expect from the description on the menu.
For desert I had the cheese plate which consisted of two pieces of cheese, fig marmalade, and for some reason lettuce with balsamic vinegar. One of the cheeses (the washed-rined) was very flavour full and went well with the figs. The other one, which I couldn't identify (and not the waitress either btw.) was however not as impressive. The lettuce was out of place and did not do much more than fill up the plate.
My macchiato came in cold and was probably made with cold milk instead of foamed. It was a hot evening and me not being fussy gulped it up. The waitress had asked me earlier if I wanted the coffee later which would have been what I asked for but I didn't want to be fuzzy.

He made sure my sisters tomato starter had the canelli put to the side so I could try! The Veal rotisserie is probably the best roast I've ever had it is gorgeous. The vegetables are placed under the rotating veal and the juices drip onto them caramelising them wonderfully, and the Veal is beautifully tender and browned. The chestnut cake is very interesting and unique, tasty, and soft gf dessert. Tuna tartare was beautiful too - it was very refreshing, especially after I had a couple of beef tartares in Paris which were a bit too pickled for me, so it was nice to have a non pickled melt in your mouth tartare!
