The food quality was acceptable and reasonably priced, but the service was truly disappointing, especially for a restaurant in a tourist destination that mentioned to serve traditional dishes of Lyon.

We had waited more than 40 minutes, and still not received our desserts, nor any apology. We reminded the waitress twice, but instead of an explanation or update, she simply replied, "Okay." The restaurant was less and less crowded at the time.

Eventually, as it was getting too late, we decided to leave and asked to pay. The only options given were either to pay the full menu price, even without receiving the desserts, or to be charged as à la carte. We mentioned that we were willing to pay the full menu price, as money wasn’t the issue, but expressed our disappointment with the service and said we would not recommend the place on Google. We were shocked by hearing the male staff responded, "To be honest, we don’t care about the reviews", also suggested that "If you want fast service, go to McDonald’s—restaurants require waiting.

I had the pleasure of dining at Fiston in Lyon and ordered the Menu Traditionnel, which included French Onion Soup, Andouillette Sausage, and Crème Brûlée.

The highlight for me was without a doubt the French Onion Soup. I’ve had this dish at many restaurants, but Fiston sets a new standard. Instead of the usual croutons, they top it with a beautifully baked pastry that soaks up the rich broth while still keeping its texture—absolutely the best I’ve ever had. The Andouillette Sausage was bold and authentic, a true Lyonnais specialty that might not be for everyone but is a must-try if you want the real local experience. It was served with care, showcasing the rustic flavors Lyon is famous for.

To finish, the Crème Brûlée was perfectly executed: a crisp caramelized top giving way to a smooth, creamy custard underneath. Classic, but done to perfection. « Fiston » est un magnifique restaurant spécialisé dans la gastronomie française, situé en face de la Basilique de Notre-Dame de Fourvière, au 5e arrondissement.

Pour l’anecdote, ce restaurant est affilié à l’autre restaurant « Fiston » situé à la rue Mercière (même patron).

L’environnement est typique de la restauration française.

Je suis accueilli par des membres du personnel des plus sympathiques que j’ai rencontré jusqu’à présent.

Choix: J’ai choisi le « menu tradition » qui se compose d’une entrée, d’un plat et d’un désert:

/Entrée: « Soupe à l'oignon en soufflé »: Il paraît que c’est « la meilleur de Lyon ».

Présentation: Incroyable. Probablement la meilleure présentation pour une soupe que j’ai vu jusqu’à présent. Une pâte feuilletée recouvre la soupe, à l’instar d’un trésor caché dans un coffre.

Dégustation: La couleur est typique de la soupe. Elle était bien chargée en oignons bien cuits, sa dégustation était vraiment excellente, surtout avec la pâte feuilletée qui ajoutait une consistance légère en complémentarité des oignons.

/Plat: « Quenelle de brochet sauce Nantua »: C’est une spécialité typique lyonnaise: -La Quenelle de Brochet est à base de chair de brochet, un long poisson d’eau douce, d’eau, de farine, d’œuf, sel et de poivre. -La sauce Nantua est une sauce à base de langoustine et de bisque d’homards.

/Présentation: Superbe. La quenelle baigne dans une sauce bien fournie, ayant effectivement la couleur de 2 espèces précédemment citées que sont la langoustine et le homard. Petit bémol: la quenelle est partiellement brûlée en surface. Une purée accompagne le plat principal, très bien présentée en forme de tourelle avec, en surface, des tranches de carottes, des petites herbes et des morceaux de champignons.

/Dégustation: C’est le meilleur plat français que j’ai goûté jusqu’à présent. Une pâte très moelleuse, le goût du brochet est bien ressorti, magnifique. Avec la sauce Nantua, on est vraiment transporté dans une autre dimension en terme de plaisir gustatif. La purée était tout aussi excellente.

/Désert: « Crème brûlée à la vanille »: en tant que fan de « crème brûlée », je valide totalement ce désert tant au niveau de la présentation, avec la tranche de citron très originale au centre, que la dégustation qui était délicieuse et où la vanille était bien mise en avant-plan.

Conclusion: Je considère mon passage dans ce restaurant comme une relation père/fils. Faire un enfant est quelque chose d’extraordinairement simple, mais le forger pour qu’il puisse avoir tous les outils pour qu’il devienne plus tard un adulte sain d’esprit, intelligent et mature est une autre affaire.
