Une expérience en demi-teinte. Nous étions venu en début d'année pour mon anniversaire et l'expérience avait été quasi parfaite. Seul le dessert autour de la chicoré nous avait laissé de marbre, ma compagne et moi, mais le reste du menu avait été une très belle surprise. C'est donc tout naturellement que nous avons voulu revenir pour découvrir la carte automnale du chef Cherchi et notamment deux nouvelles recettes présentées à la carte: une entrée autour de la patate douce de Villeneuve les Maguelone et de l'oignon doux des Cévènes mais surtout une entrée autour des Cèpes de Saint Chély. Deux entrées présentées tout récemment sur la page Instagram du restaurant et qui avaient fortement attirées ma curiosité. On s'empresse alors d'appeler pour demander si elles sont toujours présentes à la carte et après confirmation nous réservons une table pour le 23 novembre dernier à midi.

Le jour J, c'est la douche froide... La carte a totalement changé. Notre serveur s'en excuse à peine et me dit même que les cèpes ont été terminés par l'équipe 2 jours plus tôt... Mais bon maintenant qu'on y est, impossible de faire marche arrière. On se laisse donc guider par un menu Traversée en 4 temps. Les plats sont bons mais rien de vraiment transcendant contrairement à notre première visite en mars dernier. Peu de prise de risque, pas d'effet waouh. C'est bien exécuté mais on n'est pas bousculé si ce n'est par les sauces. On sent là toute l'expérience du chef avec des sauces magistrales et percutantes. Malheureusement le service en salle ne suit pas avec un service un peu avare sur ces fameuses sauces. Ce service parlons en un peu plus d'ailleurs. C'est Gabriel, le sommelier du restaurant, qui s'est principalement occupé de nous. Un service plutôt froid, des oublis dans la présentation des entrées ("œuf fermier de la maison... bon bref c'est pas grave..." ; impossible de se souvenir de l'origine des produits avec présentation très sommaire des entrées). Les autres serveurs ont été très professionnels et très agréables dans le service. Seule vrai note positive du repas et seul effet waouh, le dessert. Un dessert merveilleux autour du Sarrasin, du Yuzu et du miel: un pur délice.

Enfin, arrive la fin du repas et le moment de régler l'addition. Et là c'est le fameux Gabriel qui s'occupe de nous encaisser. Il nous demande un pourboire (si le service nous a plu...) sans que cela soit laisser à notre discrétion (très limite pour ce genre d'établissement et totalement déplacé...). Le chef qu'on avait pu voir au début du repas, n'a même pas pris la peine de venir faire le tour des tables à la fin du service car il avait une séance dédicace en ville, ce que je peux totalement comprendre. Par contre, quand on n'a pas le temps de le faire pour l'ensemble du restaurant, on ne le fait pas pour une seule table. Certaines clients sont visiblement plus importants que d'autres.

Vous avez la chance de ne pas être tombé sur 2 critiques du guide Michelin car il y a fort à parier que vous auriez pu perdre votre étoile ce jour là. Si vous êtes incapable de tenir la promesse d'un menu, faites comme le Pastis à Montpellier ou encore l'Arrivage à Sète qui proposent des menus surprises au gré des inspirations du chef et de l'arrivage des produits. Cela créé moins de frustration de notre côté et cela vous offre une plus grande marge de manœuvre avec moins...

Reflet d’Obione is more than a meal—it’s a refined, immersive experience. The menu is a true exploration of local, seasonal flavors, presented with remarkable creativity and finesse. The tasting journey included a bouchées platter, two entrées, one main dish, a palate-cleansing shaved ice, a signature dessert, and finally a miniardises platter—each dish elegantly composed and full of character.

The service was equally outstanding. The waitstaff were incredibly attentive, taking the time to explain every single detail of the dishes and ingredients. Sauces were poured tableside, adding to the sensory experience and showcasing the care behind each plate.

If I had to note one small critique, it would be that the first entrée felt slightly more muted in flavor altho the salad with it was exceptional. But overall, the experience was exceptional—sophisticated, surprising, and deeply rooted in the culinary identity of Montpellier. And you get at the end a souvenir as a thank you gift. This was a bit of a mixed experience. The good is that the savory dishes met and exceeded our expectations. They were delicious. Unfortunately the sweet courses were just okay. It would have been great to have consistency over all the courses. The bad is that there was too much extraneous time between courses. While I appreciate the time to digest there was no good reason for the half hour wait between the lobster course and the pigeon course. The service started out great but as time went on the level of service dropped. The water service was mixed up between us and the neighboring table and we were given someone else’s bill at check out (a mistake we caught). We also had to pour our own water and champagne towards the end of the meal. Michelin star service was also missing when we got up to use the bathroom. Our napkins were not refolded. There is definitely some lack of attention to detail on the service end. However, the savory dishes were so good we could overlook some of...

Chef Cherchi... Chapeau bas. This was possible one of the best expériences I have had tasting wonderful ingrédients expertly and artfully prepared for a very long time. Definitely my top choice for Montpellier. If you want to impress and be impressed, visit this place and enjoy the full tasting menu with the selected wines to go with it. The Sommelier did a wonderful job finding all those local wines that really work well (not very much the orange wine but everything else was just superb). Back to the Chef... he is an Alchemist that transforms simple ingredients into this fleeting, keeps you wishing for more, full of taste dishes. Super Amazing, thank you for the wonderful meal everyone there. (The friendly hosts are super knowledgeable about the foods and wines)

Chef Cherchi... Chapeau bas. This was possible one of the best expériences I have had tasting wonderful ingrédients expertly and artfully prepared for a very long time. Definitely my top choice for Montpellier. If you want to impress and be impressed, visit this place and enjoy the full tasting menu with the selected wines to go with it. The Sommelier did a wonderful job finding all those local wines that really work well (not very much the orange wine but everything else was just superb).
