Saturday night, I went for a trio at Bonito: Guacamole, Chicken Pibil, then Tres Leches Tiramisu. We start with the guacamole served with tortilla chips and a trio of sauces. It’s a simple starter but well executed: the salsa verde brings the wake-up acidity, the avocado plays the roundness card, and the chipotle slips in a smoky-spicy note that lingers without dominating. The chips are perfectly crunchy, ideal for alternating bites and comparing the sauces.
The Chicken Pibil comes next, Yucatán-style, with Mexican pickles, refried black beans, and cilantro. The meat is tender and generously seasoned; the pickles, nice and crunchy, bring the freshness and acidity that lighten the dish; the beans lay down a soft, creamy base that really satisfies. The cilantro punctuates the whole with a welcome herbal note. It’s a dish that plays on contrasts of textures as much as temperatures—comforting without being heavy.
To finish, the Tres Leches Tiramisu: a cake soaked in three milks with a mascarpone cream. The texture is soft, almost milky, and the cream stays supple and airy. For my taste, the sweetness flirts with the upper limit, but the balance holds thanks to the cream’s silkiness and lightness—it’s the kind of “comfort” dessert that ends the evening gently.
As for the dining room, the Saturday-night vibe is lively without becoming overbearing, and the service takes time to explain the plates. In the end, a logical sequence: freshness to start, well-managed richness for the main, enveloping sweetness for dessert. A spot I’d recommend for a relaxed weekend dinner, especially if you like Mexican flavors with a touch of modernity.

The first time, I had guacamole served with fresh tortilla chips and a chicken burrito. The second time I had a tostada with guacamole and chicken tacos. Each dish is really wonderful. The guacamole is very very fresh, the onions and cilantro were sweet and tangy. They have exceptionally satisfying guacamole. The burrito didn’t have beans so it wasn’t as filling as those back in The States but it was very flavorful and a great meal. The tostada is served with a thick seed bread, pomegranate seeds and other seeds that make it a fabulous combination of textures and flavors. English menu was not yet available but the owner was very kind in explaining some of the menu items to us. I ordered the Authenthique Merida and my fiancée ordered the Barbacoa tacos, both were delicious! The meat was well seasoned and the different flavors of all the ingredients came together nicely. The restaurant itself is beautiful dedicated with a minimalist design. Would definitely come back here again...
