We had read the glowing reviews and almost couldn’t believe they could be true, but we happily discovered that Bistro Instinct lived up to its reputation. This small, casual place tucked away in Le Marais is extraordinary both for its inventive, fabulous food and its friendly, professional, caring service. The young team passionately enacts their philosophy of all they want their restaurant to be, and they pull it off with elan. The oef parfait and the crusty tartelette starters, both exploding with flavors, were a revelation, and though the duck was uneven in texture, the tender pieces were also beautifully sauced. The turbot was sensational. Our charming server offered knowledgeable suggestions from the thoughtful wine list. They really knew their suppliers. His whole demeanor, although highly professional, was more that of a friend who wanted you truly to enjoy your dining experience. Presentation is pleasing but there is nothing remotely pretentious about the charm and flair of this remarkable bistro. We’d take this over Michelin stars fussiness any day of the year. It’s inevitable, though, that they won’t soon be showered with stars since the Michelin guide already describes it as “heaven,” and we can only hope that when that happens, Instinct stays true...

The previous day, I had a terrible experience at another place, which made me afraid to enter restaurants. But THIS restaurant, with its dinner and waiters, gave me the HAPPIEST memory in Paris. If I hadn't come here, my memory of Paris would have been miserable.
The dinner I had on the last day of my trip truly made my day.
The dishes were perfect, and the atmosphere was comfortable and warm. Both waiters who served us were so kind. That was the first time I really felt the desire to express my gratitude to waiters, even though my English was not fluent. At the same time, I was grateful that I've learned English, as I could express my pleasure at least.
If I visit Paris again someday, I'd really like to come back to this restaurant!
Sorry for the long review that doesn't seem relevant to the dishes. But I wanted to say that I'll never forget this restaurant and the conversations with the waiters. Whenever I think back on my trip to Paris, I'll remember the dinner in this restaurant every time.

The ambiance of the restaurant is lovely and has a very homie and comfortable feeling, but still allowing a sense of privacy.
The menu is quite small but it is something that I appreciate so it allows you to not be constantly debating between dishes. I really loved the flavor and the techniques that went into all the plates. I just had one issue with my main entree as it the carrots which were presented in many different ways, were slightly too acidic and ruined a bit the balance of the chicken main plate.
Went here a second time, and wow wow wow. Food was absolutely unbelievable… everything was perfect from the starters to the deserts. I updated my review from 4 starts to 5 because of this last encounter. Really the best restaurant paris.
The staff is very organized and it was a pleasure to have a table next to the kitchen were we could see them at work, which added an extra fun to the experience.
