I discovered Bombance by chance one day while walking around the Marais, and I was excited to give it a try. Unfortunately, my experience disappointed. The service wasn’t the best. This restaurant is clearly popular and it was very busy. I was a party of one and was left unattended for quite some time. There were two servers, one would often take my order only to have the other come to me and ask to take my order again. Seemed to be a lot of miscommunication between the two of them—or they weren’t communicating to one another at all.
I had made the reservation days in advance, and where did they seat me—in view of their wine fridge against a white wall. The irony was that I sat there staring at my empty wine glass while my meal came to me before my ordered pairing.
The food lacked confidence and consistency in flavors. I ordered the poached egg and mushrooms. It was good, but needed more chives or acid to make it better.
Bread came with the dish, why didn’t I get bread when seated…I did wait a while for my starter. Just bring out the bread with some butter would have been nice. Or maybe a small bite to welcome me while having my aperitif?
I opted out of trying their signature dish, the sweetbreads. My stomach just doesn’t enjoy them, so I went for the Brill fish. While the dish looked absolutely stunning, it had a big bone or cartilage on the first bite-I had to spit it out. The dish had good flavor especially with the pickled beets and radishes, but I think the chef could elevate this dish with Himalayan salt shavings on top of the fish.
My favorite dish was the blue cheese, which is says enough about what I thought of the prepared meals. It was creamy and went well with the bread.
Finally, I had the clementine and pistachio dessert, which was delicious, but it was placed on more bread—it doesn’t need the bread at all.
I would skip Bombance, unless you love sweetbreads—then maybe your experience...
Read moreToday I had the pleasure dining for lunch at “Bombance”, 40 rue des Blancs Manteaux, Paris 04, France. “Bombance” in French, loosely translates to “feast” & “gastronomy”, which truly fits this new restaurant located in the Marais. Their menu seems focused on offering fewer items on the premise of elevating quality ingredients, creating dynamic flavors and using seasonal availability for their offerings. They have succeeded in showcasing delicious flavors done to perfection, elegantly plated. Their wine list is well rounded with plenty of depth and variety. They are well versed in great wine. They have two menus: one for lunch and one for dinner. The delicate fish that I had for lunch was perfectly prepared and presented on a bed of luscious sweet potato puree and sauteed greens. The crème caramel for dessert was silky and oh so rich- a little goes a long way in the perfect finish to a great meal. The soup of the day/week was a cauliflower-based soup that sounded and looked delicious (thanks to the diners nearby) but I knew that the man course and dessert would be filling enough for me! Just another reason to go back! The prices are more than reasonable for this amazing cuisine. The staff was warm, welcoming and attentive. I enjoyed my solo dining experience and look forward to trying the scallops for dinner soon. If you are in Paris this should definitely be a “must” restaurant...
Read moreDuring our recent trip to Paris, we were incredibly fortunate to find ourselves staying right next door to the delightful bistronomic gem, Bombance, in the vibrant Le Marais district.
Having just arrived and feeling a bit tired, we were thrilled to walk in and secure a last-minute booking for our first evening. The staff at Bombance were warm, welcoming, and incredibly helpful in guiding us through the menu.
Their contemporary French-inspired offerings struck the perfect balance of creativity and tradition. We appreciated the flexibility to order one or two dishes at reasonable prices or opt for the set three-course menu for €55.
Every bite was exceptional. The flavors were beautifully layered, and the sauces were so irresistible that we eagerly used the fresh bread to soak up every drop.
The wine list, though small, was expertly curated, offering superb quality wines starting at just €7—a rarity we’d never find back in Australia!
Bombance is a must-visit for anyone in Paris. My advice: book ahead, as this place is deservedly popular. We’re already looking forward...
