This restaurant served what French cuisine is world renowned for actually delivers for the discernable palate.
Chateldon is finely sparkling water, not available anywhere. Their French Onion Soup is the best I've ever tasted with a complex taste for the tongue. The green bean salad came with excellent mushrooms, their pork rib with Morel mushrooms excellent when requested cooked just to 62.7 degrees Celsius is safe to eat pink while retaining a moist, juicy taste. Most people would not be happy with the pork showing any pink, but it is safe to eat from disease when cooked to that temperature. Most people don't know how to appreciate meat. Cooking it much more than would be overcooked and its appreciation of pork drastically falls off for my palate.
We topped it off with their tartin made with caramel. I found the tartin a bit too sweet, not a fan of caramel.
The waiter was helpful, amusingly funny, best childhood friend with the chef owner. The chef's wife was very knowledgeable about their food.
This is the kind of quality I seek but hard to find at any price. But it wasn't only the food that was good, the interaction with the people I'd appreciated. I'm glad this restaurant exists, give this place my highest...

The day I visited the restaurant was right after I arrived in Paris after a 13-hour flight. It was my first time experiencing a restaurant in Paris. Beef tartar and baked potato octopus salad were excellent. However, the traditional shellfish dish did not smell good. I wanted to change to a different menu and the staff didn't feel bad and kindly changed it. Also, the chef came out and said sorry in personally. Chez Maurice's memory made the impression of Paris even more beautiful. It's a restaurant with great people and great dishes. Above all, you can trust whatever menu you order.
