Ok will defo never trust a local french reviewer for this kind of place, it certainly was exotic because he is coming from the Larzac, but come on, in 2024. For sure he wasn’t depicting the place badly ‘as being authentic’, indeed stuck in the 80’s

Ok only one good point, the quality of the tuna sashimi. ok but come on, I will do that at home going to the local fishmonger, and I am sure I will be more exotic on the ‘accompagnement’, look at the photo of some ‘persil frisé’ and a slice of lemon.

it’s so vintage, it’s almost to be ‘laughed at’.

Oh no, there is a second positive point, the rice (lol). it was good quality and soft and lightly sweet, not a bad one (at least)

on the Maki side (9 EUR 6 small Maki), don’t try to be exotic either, when you used to enjoy some Eel and Asparagus with Tempura flakes in Avocado, those amazing rolls from Pham Sushi in London at 14£ for 10 rolls, of course you can’t be amazed. It's basic and old school.

The most inventive Maki was with ‘ciboulette’... that can’t be serious in 2024.

As a result, I can't wait for the new generation to take over their parents' mindset from the 80’s like Paris youngsters did recently on the Chinese side with the Panda Group or Bao Family
 Paris needs some big time HEC/ESG level mindset change on the Japanese side so we can all enjoy decently priced sushi with inventive quality. and I am not including the FR/JP fusion restaurant scene in Paris which is famously renowned like Abri Soba, EunoĂ© or not even mentioning Kei.

Btw, not really the most friendly service, maybe don't bump into the grumpy waiter as we did (a bon entendeur ‘salut’).

one very striking point also, the speed, it’s almost faster than McDonald’s. Our two first plates were served in Olympics game speed, so ‘a la chaine’ that it’s not enjoyable.

Go to a sushi shop, it’s far more glorious. they do a JV with Albert Adrià

In my lifetime I have never given a review to a place but I have to. I can’t review this restaurant without sharing an anecdote. I was recommended this place by a friend. I arrived to the place and it looked like a regular Japanese sushi restaurant, nothing special. As I’m walking I notice quite a significant line that would take 1:30h to get in. I stop in slight confusion, and I’m like wait something ain’t right! There is no chance there would be such a line for such a regular looking place. There is something I’m missing here. So I go and take the line. I eventually go inside after what was a long wait and I order the toro nigiri. When I tell you it is the best piece of sushi I have a ever had, and by a country mile I am not exaggerating. They serve the highest grade of toro where it is not red it almost pinkish whitish. Which you will not get in any of these commercial expensive sushi places like Zuma, Nobu, etc. And you’ll pay 1/5 of the price. The toro is so great you taste it twice, once during and the after taste remains in your buds for a minute.

Anyone wanting the best sushi in not just Paris but anywhere...

J’ignore sincĂšrement l’engouement pour ce restaurant censĂ© ĂȘtre « spĂ©cialisé » dans les sushis. J’y suis allĂ©e la premiĂšre fois l’annĂ©e derniĂšre et j’ai dĂ©testĂ©. Je me suis dit que c’était une expĂ©rience Ă  renouveler car j’étais peut-ĂȘtre « tombĂ©e un mauvais jour ». Je voulais donc donner une seconde chance Ă  cet Ă©tablissement. AprĂšs une attente de 30 minutes devant (assez courant Ă  Paris donc aucun souci), on se fait installer Ă  une table pour deux alors que nous sommes 3. Avec une chaise (sale) en plastique pliante pour mon ami. Quand on pĂ©nĂštre les lieux, on a dĂ©jĂ  un doute sur l’hygiĂšne. Le service est trĂšs moyen, voire dĂ©sagrĂ©able. Les serveurs n’écoutent pas ce que l’on demande, mĂȘme si cela est rĂ©pĂ©tĂ© 3 fois et lentement. Pas de souci, tant pis je mange ce qu’on me sert car c’est cause perdue de se faire comprendre. Ce qui atterri sur la table est tout simplement une abomination. Je pĂšse mes mots. Car quand on lit l’assurance et la fiertĂ© sur le visage du personnel, on s’attend Ă  un minimum. Et lĂ  c’était un minimum proche du 0 : le seul point positif Ă©tait la variĂ©tĂ© de poisson. Ça, c’est la base d’un restaurant de sushis. Ensuite, c’est la descente, et la chute ne se termine pas : les edamame reçus gratuitement (encore heureux) Ă©taient surcuits et avaient une couleur qui viraient au jaune. Les sushis, composĂ© de 2 ingrĂ©dients, Ă©taient une catastrophe. 2 ingrĂ©dients mais qui nĂ©cessitent une maĂźtrise totale de la dĂ©coupe du poisson et cuisson + assaisonnement du riz. Les 2 Ă©taient ratĂ©s. Le riz Ă©tait surcuit et en trop grande quantitĂ©. J’avais l’impression d’avoir de la bouillie de riz dans la bouche, j’ai fini par manger Ă  contrecƓur que les tranches de poisson (cf. Photo) car je ne voulais pas gĂącher. C’est une honte de servir un riz pareil. C’était la mĂȘme chose la derniĂšre fois. Pour le poisson, aucune finesse dans la dĂ©coupe, et peut-ĂȘtre que c’était frais, mais le choix de dĂ©coupe et la texture en bouche est un tout. C’était ratĂ© Ă©galement. Et nous avons tous trois eu du tamago (Ɠuf) GRIS, photos Ă  l’appui. C’est inacceptable de servir une chose pareille, les services d’hygiĂšne et de sĂ©curitĂ© devraient y faire un petit tour car tout le monde le sait, nous ne sommes pas censĂ© manger de l’omelette grise. J’ai quand mĂȘme goĂ»tĂ©, rien de particulier mais j’ai arrĂȘtĂ© car cela me paraissait trop suspect. Étant spĂ©cialisĂ©e dans les sushis, j’ai sincĂšrement eu du mal Ă  comprendre tout ce monde et toute cette queue pour ce restaurant. Croyez-moi, il y a d’autres restaurants, de vrais japonais, Ă  Paris, qui sont bien meilleurs en terme de sushis. Le sushi est un art nĂ©cessitant des annĂ©es d’apprentissage pour en arriver Ă  la maĂźtrise. Je ne pense pas ĂȘtre la premiĂšre Ă  faire une remarque sur le riz ou le service, ou encore l’hygiĂšne, alors redescendez de votre nuage et Ă©coutez/lisez ce que disent/Ă©crivent vos clients. Rester sur ses acquis est l’assurance de perdre des clients, de ne fidĂ©liser aucun client et de n’avoir que des clients « d’une fois », du type touriste. Je suis nĂ©anmoins contente d’avoir retentĂ© l’expĂ©rience pour dĂ©sormais confirmer que ce n’est pas un restaurant dans lequel je remettrai les pieds et que je ne recommanderai Ô grand jamais.
