This is my favorite little wine bar (and wine retail shop) in Paris. They specialize in wines from small producers around France, and have a selection of maybe 300 or more at any one time. If you want to find some very nice quality wine at a fair price, this is a great place to spend an hour or an evening. The ladies who work here are knowledeable, personable, friendly, and make great appetizer plates too. They always have a number of bottles open for tasting and to buy glasses of. You can also buy a bottle to drink there, which they will decant for you at your table. There are only about 25 or 30 seats, so you might find it full if you go late on a weekend night. The appetizers include meat and cheese plates, fresh and tasty humus they make there, and more. I was greeted warmly by one of the owners, Pierre, who could not have been more informative and welcoming. Les Caves is easy on the eye and even easier on the stomach! The wines are, as I learned, mostly bio and "natural" from small producers. These are wines that are not easily found elsewhere. They have been carefully selected by Pierre and his partners. I sampled several wines from Languedoc and several more from Samur. All were delicious, unusual and interesting. The wine is very reasonably priced, either by the glass or bottle. Une horreur en bouche, une teneur trop persistante d'acide qui oriente cette bouteille plus vers le rayon vinaigre. Vous pourrez élaborer vos vinaigrettes des plus raffinées pour la modique somme de 21 euros la bouteille (d'ailleurs même le propre site web desdits frères Mickey concernant ce vin est en construction, comme le vin lui-même d'ailleurs, là où est poussé beaucoup trop loin le délire bio des vins "naturels"). Comme dans le vin tout est question d'équilibre (même si cela fait peut-être appel à l'horrible notion réac de la tradition), il s'agirait peut-être de trouver un juste milieu entre le respect de l'environnement (paraît-il) et le respect de mon palais, qui en a pris un sacré coup dans le caisson.
