If you’re on the hunt for the best bahmi in Paris, look no further. This spot is an absolute gem, and their fried chicken bahmi is a masterpiece. It’s clear they take pride in not only their food but also in creating a warm and inviting atmosphere. In all honesty, this was the best bahmi I’ve ever had. I ordered delivery, the order was prepared in a very reasonable amount of time. The ingredients are fresh and fairly plentiful. I ordered two different half banh mi’s- Demi jabon beurre & the VFC (Vietnamese fried chicken). I enjoyed the Jabon beurre the most- packed with different types of meat including pork floss which I’ve never tried before, there’s also something inside that gave it a kinda sweet and kinda cheesy taste which was nice. There’s some sort of pâté on this sandwich too. I found some of the meats to have too much fat on them so I removed prior to eating, which took away quite a bit of the product. My first time trying Banh mi in Europe and I’ll definitely say it’s pretty authentic. There’s an option to add red chili which was nice. The friend chicken banh mi was underwhelming. Don’t taste much of the fried chicken, it’s fairly unpronounced, especially between all the baguette bread. Can’t complain though! It was a great value for just 10/11 euros for both sandwiches. The baguette bread was tasty, fresh and crunchy. I’d definitely return, hopefully for a sit down meal next time.

I added the pate to the VFC, which was sooooo delicious. The chicken was so flavorful and still crunchy even with all the add ons. the aubergine was perfectly seasoned, not oily and very flavored. We asked for them spicy and they were actually spicy. The donuts - insane. So light and fluffy, not greasy, and fillings were delicious. Had the kaya and the passionfruit. Do not skip And last, the people working were so nice and clearly cared about us as customers. Low key gonna have this a second time in our short trip

Amazing food! I had the VFC banh mi and it was absolutely delicious. The meat was tender on the inside and crunchy on the outside, vegetables were very fresh, sauces very flavorful, and the baguette soft and crispy. I specifically asked for no cilantro and they were accomodating since they make everything on the spot. They also had some interesting donut flavors to try - I had the kaya, which was really nice, but I wish I'd tried something more exciting. Service was reasonably fast, I only had to wait about 5-10 minutes, but they were very kind and polite. The seating area is outside and a bit small, so it might get crowded when it's busy. A bit off the beaten path if you don't live or work in the area, but if you're ever at Republique and don't mind a 15 minute walk,...
