There are a few vegan restaurants in Tbilisi. Yet very few places that serve vegan versions of Georgian dishes, such as khachapuri.
I visited Shpana a few before I actually dined in there. However, I came during an evening and they had run out of dough. So I went to another place instead. Came back a few days later for lunch and ordered their adjarian khachapuri.
I’m not too familiar with Georgian cheese, especially on khachapuri so I can’t comment too much about its closeness to authenticity. I can only comment on the flavour notes - which is the cheese was a bit salty. I was told Georgian cheese for this type of dish is normally a bit salty. The “egg white” was tofu based, which to be honest, I didn’t really love nor dislike. It was just ok.

Read moreThe taste of the meals were magical for us. Thank you very much. We ate Cheeseburger Pizza, Ramen and Kimbap. We drank their simplest White Wine, it was incredibly delicious so we cannot wait to try other beverages. You have to accept and appreciate the great fact that this place's ambiance is authentic, raw, comfy and natural. You feel like you are in a Human Constructed Forest.. So do not expect the capitalist attitude from this place: this place is not trying to prove its value to you by fake smiles, fake attitude, unnecessary speed which steals from the meal's quality, they not trying to dye your eyes with panache. Them, writing their menu by handwriting on a big sheet instead of printing awful shinny bad taste menus was a great piece of Kitsch Art. Their food is obviously made by a chef who values "being in the moment", total commitment you can taste in the flavours.
