I chose miso ramen, and while it was acceptable, it didn't quite match up to the authentic ones I've savored in Germany, Chashu was small, and what surprised me was, asking for chili oil is considered as a topping for ramen which costs extra for requesting it(I thought it’s very common to have the seasoning to ask for in a Japanese restaurant as a free service) The beef tongue and gyoza, however, were satisfactory. Unfortunately, the service left much to be desired. The evening prior, we were informed by the owner upon arrival at the restaurant that he wasn't accommodating guests because he was hosting friends. Disappointed, we planned to return the next afternoon without a reservation, as per his assurance that it wouldn't be necessary. Despite confirming with him, we arrived today to a lengthy queue, a situation easily avoidable had we been allowed to reserve the night before. It's puzzling why the owner dissuaded us from booking.

Upon entering, the service was just okay, with the staff attending to tables that arrived after us first. While the restaurant is a decent addition to Würzburg, it falls short of being exceptional enough to recommend to my German friends seeking an authentic Japanese...

The atmosphere is good and I personally like the chopsticks they provided. I may be too harsh on the food but totally I think it’s good.

We ordered miso-ramen 味噌ラーメン and Takoyaki たこ焼き Ramen tastes good, while the soup is with too obvious soy bean paste taste, this causes an unbalanced soup taste, and unfortunately the soup that day was too salty for me. The pork was good, while if the given meat is not Schweinebau but traditional rolled pork, it would taste better. But this is not a big deal. The egg is a big surprise, it’s very tasty, and I’d like to recommend that. Takoyaki is good. It’s a little bit greasy for me but totally I like it. It’s with melty inside and a very small octopus but I’m already happy with it. I missed かつお節 (forgot the English name) so much and I’m happy that I can...

Zuerst muss ich zu dieser Rezension sagen, dass ich das Ichiban mit dem fast Namensgleichen Ichiran aus Tokyo vergleiche wenn es um das Ramen geht, doch an diesem müssen sich alle messen lassen.

Der Service war freundlich, allerdings etwas überlastet. Wir wurden teils ein wenig vergessen aber alles in allem gut. Es war auch ein stressiger Abend. Daher möchte ich das nicht überbewerten.

Da ich an der Theke saß konnte ich sehen wie der Sencha zubereitet worden ist. Da hat sich in mir alles zusammengezogen. Sencha ist ein sehr feiner Tee und diesen mit kochendem Wasser aufzubrühen ist ein absolutes Unding. Letztlich hatte dies auch zur Konsequenz, dass ich lange Zeit nichts trinken konnte bis dieser endlich abgekühlt ist.

Das Ramen an sich war in Ordnung. Sowohl die Brühe als auch die Nudeln, sowie die Beilagen. Eine besondere Erwähnung darf hier das Rahmen-Ei erhalten. Dieses war hervorragend. Das Chashu hingegeben war alles andere als zart. Nur, da es so extrem dünn war vermittelte es einen Hauch von Zartheit. Hier ist kein Vergleich zu richtig gutem Chashu in Japan. Die Scheiben sind deutlich dicker und sie zergehen regelrecht im Mund. Ich hatte zwar schon schlimmeres Chashu in Deutschland, doch die beworbene Zartheit ist sicher nicht gegeben.

Richtig negativ ist hingegen das Naruto aufgefallen. Ich hatte noch. nie ein Naruto mit so extremem Fischgeschmack bei so seltsamer Konsistenz. Sowohl meine Begleitung als auch ich mussten es herunter würgen und dagegen ankämpfen uns nicht zu übergeben solange es im Mund war. Ich hätte ja gesagt es liegt an mir, da ich Fisch nur bedingt mag, doch da es auch ihr passiert ist und sie Fisch sehr gerne isst war irgendetwas äußerst merkwürdig am Naruto.

Als Fazit kann ich sagen, dass es im Ichiban besseres Ramen gibt als ich an so manchen Orten in Deutschland erlebt habe, doch bei weitem nicht an die Qualität in Japan...

I had high hopes for the food here, but sadly I was not surprised by the taste. The noodles in the Ramen were good, but I didn't like the Chashu and the broth. Chashu was way too fatty, and the broth was boring. Karaage was nicely cooked, but served with salad felt weird. The atmosphere was clean and nice, and the staff was also friendly. The seats are quite limited, a waiting time during the dinner time is expected, and no table for a big group.

I had high hopes for the food here, but sadly I was not surprised by the taste. The noodles in the Ramen were good, but I didn't like the Chashu and the broth. Chashu was way too fatty, and the broth was boring. Karaage was nicely cooked, but served with salad felt weird. The atmosphere was clean and nice, and the staff was also friendly. The seats are quite limited, a waiting time during the dinner time is expected, and no table for a big group.
