After a lot of searching around, I finally found this place again. The chef makes gourmet omelettes at reasonable prices. Before they were located elsewhere on the same street in HSR, but now they are located right opposite to Aiswarya supermarket which is close to the Indian Oil Petrol bunk. It's a small blue cart in the middle of the street.
They make a few varieties of omelettes including veg and chicken options. Now they also make a few extra things like grilled quail and chicken wings and I think the menu varies on different days. The omelettes are my personal favourite. Tried the chicken and cheese omelette which was a heavy portion with lots of chicken, bell peppers, jalapenos, mushrooms, broccoli, baby corn, onion inside it. It cost 250 rupees. One thing that was slightly disappointing was that I couldn't taste any cheese in the omelette. However, the other ingredients were well balanced and one omelette itself is quite heavy so it's better to share and enjoy. As far as I know, 3-4 eggs were used in the making.
No matter what other people say, if you really like omelettes, that too gourmet style, you can enjoy it on the streetside itself without visiting a fancy restaurant. The rates are pretty reasonable considering the kind of ingredients being used and the passion the chef...

This is a paradise for nonveg lovers. And limited option for vegans (Eggetarians) like me. People come from far places to try different kind of omelets.
I was there at 5pm, but Chef Kumar and his wife came by 5.30. Mrs Kumar took my order of Classic Veg Cheese Omelet. There were bunch of people who came before me. So I had to wait nearly an hour to get my order.
Chef Kumar prepares omelettes using 4 eggs. My order was juicy, spongy omlette loaded with Mushroom, Broccoli, Onions, Red Chilli, Baby corn and mix of herbs and spices. Chef Kumar takes around 15 mins to prepare an omlette.
It was too hot and I took nearly 20 mins to finish eating my omlette and enjoyed each and it surprised me with spices, veggies and cheese in each bite. I really loved it.
Though the price is bit high, I say it's worth trying. You might think why it's so expensive for street food which is sold on cart. I say you experience and then comment.
One must have to be really patient to get your order or go early to avoid long queue. I also heard from him saying nearly 30 customers went back empty handed, as they couldn't wait, the previous day.

Food : Loved their Chi Cheese Burst Omelette. Very filling, even though I ordered their mini meal it was quite filling for 1. Filled with Broccoli, Mushroom, tasted really good and fresh. I asked for a dish if they had any prepared using boiled egg, which was something off menu. They graciously accepted it and tried a new dish and served it which was super yummy. Infact they decided to add it to the menu. Very humble folks.
Service : It’s commendable to see they’ve kept service on the top. Their team is constantly greeting people and welcoming them, ensuring everyone is being attended and taken care of. Hope this will continue the same and I’m sure this place will be one of the hotspots.
Ambience : I guess earlier they didn’t have any seatings, now they do, and as per other reviews if they’ve progressed for a simple cart to a restaurant the ambience truly showcases the progress.
Overall : Excellent place, loved to see a place dedicated for Egg stuff. Will be visiting again...
