Galouti Kebab: Melt-in-the-mouth perfection! These delicately spiced kebabs were incredibly flavorful and paired wonderfully with the soft, buttery ulte tawe ka paratha. Read moreJamavar is the specialty Indian restaurant at The Leela Palace Bengaluru. This week it is having a "sigri" kabab feastival. Unlike the traditional tandoori kababs, all these kababs are cooked over an open hearth or sigri.
We were invited to a tasting. The menu
VEGETARIAN NADRU AUR AKHROT KI SEEKH Slow Roasted Skewers of Minced Lotus Stem with Walnut and Spices PANEER THEH PE THEH Mushroom and Green Pea Stuffed Cottage Cheese Kebab Marinated with Mustard and Yogurt SEAFOOD SALMON ALI SHAN Fresh Norwegian Salmon Kebab Flavored with Basil and Chilli JHEENGA ANGARA Tiger Prawns Marinade with Ginger, Garlic and Kashmiri Red Chili Paste CHICKEN MURGH KI CHAAP Chicken Thigh Marinated with Mint, Coriander, Spring Onion, Green Chilli Chutney and Spice MURGH E FIRDAUSI Chicken Breast Stuffed with Minced Chicken, Pomegranate, Cheese and Marinade with Spiced Yoghurt LAMB KHANDAHARI RAAN Twice Cooked Whole Leg of Baby Lamb Marinate with Onion, Ginger Garlic, Green Apple, Nutmeg and Finished in Tandoor GOSHT BHARRAH LAZEEZ Lamb Shanks Marinade with Fennel Leaves, Fennel Powder, Royal Cumin and Star Anise
All the kababs are of the very high levels one expects from Chef Purushottam Naidu, to me the stand out must try dishes are :
Murgh Firdausi -- loved the creamy rich filling. Like a walnut pomegranate chicken mousse stuffed into a crispy outer chicken roll. Paneer Theh Pe Theh - triple layered cottage cheese sandwich Salmon Alishan -- how often have you had a fish with a Tulsi (holy basil) marinade. The combination works beautifully. The Barrah -- the Leela may call it a Barrah, but it is a lovely meat falling off the bone Nalli (shank) cooked in milk and with a delicate taste of fennel. An Osso Bucco doesn't hold a patch. Kandhaari Raan, dal and sheermal -- unlike the Sikandari Raan found in many places this leg of lamb is cooked twice to preserve moisture while still cooking it fully. I don't need to say more King prawns angare -- just the lovely balance of the prawn sweetness and fire...
