We went here for lunch, not expecting much. But boy what happened next was not only unexpected, but thoroughly inexplicable.
Chef Ali is the most talented, humble and kind person you'll meet. He not only guided us throughout the culinary experience, from ordering a la carté (items not even on the menu) to preparing the dish to suit our palate, but also kept checking on us throughout at regular intervals to make sure we had nothing to complain about.
Coming to the food, we ordered the butter garlic kingfish, which was prepared meticulously by Chef Ali. It came with assorted veggies, mashed potatoes and a butter garlic sauce, which was the signature sauce of the chef. The food was incredible to say the least. It was perfectly cooked, and the size of the dish had us wondering if we would be able to finish it. However, it was so delicious that we were left licking our fingers at the end.
Chef Ali had asked for some preparation time, and kept us occupied in the meanwhile by sending tidbits like the restaurant's signature bread, lemon tart and even chocolate ice cream for dessert, all at no extra cost.
Now the cons:
The waiters were largely clueless and could in no manner match the enthusiasm of the chefs. They wanted us to have the buffet thalis rather than have to explain the a la carté items. If you go there, demand to see the chefs and talk to them.
The menu is small, and most of the items are not there. However, talk to the chefs and they'll readily prepare anything and everything for you. Chef Ali even showed us pictures on his phone as to how the dishes would look once prepared.
The management needs to market the restaurant better. No way one can figure out what Flavours is offering if they don't advertise it.
Final verdict: Flavours is a must try if you are in or near Palolem. Speak to the chefs directly before ordering. Tell them exactly how you want your dish done, and let them weave...

Will rate the restaurant very high on its taste of food. Hygiene levels are high - everything is clean and all staff were found to be using masks.
The staff at the restaurant are extremely efficient and prompt. They keep a sharp eye on every diner's requests and promptly takes care of their requests. Amongst the entire team there, would like to make a special mention about Mr.Ankur - highly energetic, well mannered, polite and eager to serve.
One point for improvement - the restaurant must include a wide range of sea food options in their buffet spread.
