First Impression Hyatt is among the top five star properties in Ahmedabad, so, needless to say, I expected nothing less in terms of experience.The facade is quite imposing, beautifully so, and even the foyer is extremely classy. With high ceilings and classy design, the foyer does radiate the warmth of luxury and comfort.
The concept It's the very first time in Ahmedabad that someone has tried to bring a luxury live cooking concept. The Oriental Grill, as the name suggests, has captured something from cuisines all over the Orient.
Ambiance The Oriental Grill has replaced the erstwhile Nonya, but the design changes are quite visible. They have added elements from the Orient to create a proper Oriental experience. The tables are well spaced out and extremely comfortable. There is a griddle/grill in the centre and the tables are arranged surrounding the griddle. Each griddle has an individual chef assigned, who cooks the entire main course right in front of you - making it look so easy.
Service The service was well beyond my expectations; the waiters, attendants, and even the chefs are extremely courteous, polite, and well-mannered and exuberate an amiable warmth towards the patrons.
Food
Miso soup The miso soup here is probably the best miso soup that I've tried till date. It was the perfect combination of spring onions, tofu, and wakame into the runny dashi stock and miso paste mixture - it was just perfect.
Seafood basil soup The seafood basil soup was also runny, much like the Japanese soups. Ebi cracker The ebi cracker roll is probably the best sushi roll that I've tried in Ahmedabad.
Rock corn tempura Even the rock corn tempura - with the light batter crisp corn cake and wasabi mayonnaise, was extremely crispy and delicately delicious.
Amuse bouche After the soups and appetizers, the served the amuse bouche, a palate cleanser of sorts - an amusement for the palate, hence the name.
Shanghai style chicken dumpling It was a perfectly cooked, thin skinned chicken dumpling with minced celery, garlic, ginger, and soy, and it was perfectly juicy as well, not at all dry.
Prawn Shao Mai dumpling I've never really gotten around to accepting the texture of prawns in a dumpling, this however, was a different story.
Hunan style lamb dumpling I've seldom liked lamb dumplings as well, perhaps, I had never eaten good ones.
Chef's special bar-be-que chicken steamed bao One bite into the bao, and I was lost in a completely different world, a parallel universe, perhaps.
Wasabi sorbet This was served as a palate cleanser between appetizers and the main course, and the pronounced spicy, tangy, zesty, and salty flavours of the wasabi mixed into the icy sorbet simply blew me away.
Tiger Prawns in yellow curry The tiger prawns were perfectly cooked on the girdle, along with spinach, onion, and water chestnuts, and tossed and mixed with yellow thai sauce.
Twice cooked pork rib in Hoisin sauce The pork ribs were double cooked on the girdle and mixed with pok choy, ginger, sesame, and corriander and tossed in sweet and spicy Hoisin sauce. Although the vegetables were perfectly cooked, the pork ribs, despite being double cooked, seemed quite undercooked and chewy.
Shredded chicken leg in chilli black bean black bean sauce Although the pork ribs had been a slight disappointment, the chicken raised the bar once again.
Burnt chilli garlic fry noodles The main course was served with the sides of burnt chilli garlic fry noodles, which tasted extremely delicious.
Chef's special sticky fried rice The sticky fried rice tasted great just by themselves.

Absolute heaven Shrimp Tempura - Crispy shrimp heaven with a sauce having sweet notes to it. Chicken Bao - This is something you cannot have just 1. Small sized bao with filling of chicken chunks in gravy of onions and flavorful seasonings. Super soft almost like a fur ball soft , bao is heavenly. The only sad part is they just have 1 bao - chicken and no variants at all. Dumplings 1. Chicken 2. Lamb 3. Mushroom - for dumplings order any and they have perfected their art. Just something we didn't like, it didn't suit our taste was the prawn dumpling, becuase it is seafood it remains moist on the inside of the dumpling. Prawn Yellow Curry - superb size of prawns and flavorful curry, how could it be so perfect!! Goes very well with sticky rice Sliced lamb - almost minced lamb but chunky enough filled with superb flavour and spot on seasoning. Cooked to perfection Caramele Alaska - This was the best dessert out of the lot. Chilled chocolate sauce ( yes, opposite to the hot sauce which is so common) poured over a spongy chocolatey sponge cake was again heavenly Banofie Pie - You don't get such a banofie pie in Ahmedabad. Perfect caramel, outer layer of crumbs and raw banana, just perfect !! Chef's Special Mille Feuille - Not reccomending the only thing in the entire menu we didn't really like . It was too much of whipped cream! tasted of nothing else. The fun element is they serve some amazing amuse bousche right after appetizer and before main course, It helps to cleanse the palette.
