Delectable experience @ Souk- visit 23/ Dec/ 22
We took lots of pictures but didn’t take any of the food itself… We were corresponding with Shakti Singh for a month now and eventually had to change the booking time twice which he efficiently obliged. Our host for the evening was Bratin and understanding our preferences served us a “ Black Tower Riesling” wine

MOUTH-WATERING MAIN COURSE- Samak salalaha - (chargrilled bhetki)-absolutely fabulous; Dijaj Harra kebab- ( chargrilled chicken with harissa sauce)- soft and lightly hot Kebab meshwi (grilled minced lamb) for the main course.
DELICIOUS DESSERTS- We were full and satiated but couldn’t leave the Baklava. Bratin suggested we order their house speciality Rose petal ice cream which was very good.

In this hotel, all aspects are like that barring the service at souk (and sometimes sonergaon). I had a bad experience in the past but let me describe this one which was reminiscent of the previous. Show up at 915, no one comes to give water till 925, 10 more minutes no one to ask for order. Finally flag someone down who takes the order. 15 mins goes by, still no beer. At this point I hear another party tell the manager how they have been neglected as well. The restaurant wasn’t full by any means. Finally at 20 mins past ordering my drink, I had to go and tell the man to cancel our entire order. He was obviously very shaken and while it wasn’t his fault, this is for the restaurant group at taj bengal to get their act together and not be complacent. 95 % of this job is customer service. That’s literally what you are paying a premium for. Oh my 84 year old grandmother was sitting right next to me very hungry and they still didn’t have the common sense to bring our appetisers out quickly (hummus and pita bread btw). Shambolic...

Comprising of lots of vegetables, herbs , seasonings and meat this is the most healthy of all cuisines. Influences from the Lebanese, Syrian, Egypt, Greece, Palestine and other countries this is one helluva cuisine.
Souk is a beautiful restaurant done in pastels and looks so fresh even at Dinner ( it's open for dinner only). The Expat chef has done wonders with the menu, use of yoghurt and cheese like the haloumi, feta cheese and labneh just make it so wonderful. Big variety of salads like the Tabouleh, Fattoush paired well with the Dios and condiments like the Hummus, Mohmara, Babagannouj and more endless options.
Use of chickpeas , Bourgul(kind of wheat) and beans and the endless herbs like the mint, parsley and use of sumac ( a sour berry) just make it so unique.
Souk has a vast menu covering almost every region of the cuisine, grilling, roasting, baking and even Moroccan tagine is used for a few different sh preparations.
